Pancakes make sunday’s so much better!

Lately we have not had to be to work until 8 AM, meaning we get an extra glorious hour of sleep! Omg, seriously summer you are so close but yet still so far away. When your little, you never understand why your older siblings would sleep for so many hours in the day, but when you finally reach those years yourself, you absolutely love love love sleep. While at Target the other day, I spotted this shimmering box of Pumpkin Pancake mix. WHAT! And it was on sale for $3.

 We used this mix as a basis, then added our own creation, instead of following the boring per usual route on the back. What we did was:

Serves 1:

  • 1/2 cup of Pancake mix
  • 2 Tablespoons of unsweetened applesauce
  • 1/2 Tablespoon of Wheat Germ
  • 3 Tablespoons of unsweetened Almond milk
  • 1/4 cup of water, or to pancake like consistency
  • Lots of cinnamon
  • 1 Tablespoon of silvered almonds

*Makes about 4 small/medium size pancakes

 Then, each one was topped differently, but all with nuked cinnamon agave apple chunks. They were topped as follows:

  1. Skippy All Natural Chunky PB, and Pumpkin Butter
  2. Dark Chocolate PB and trail mix
  3. Honey Greek yogurt and granola
  4. sugar-free syrup

 The perfect cozy Sunday morning breakfast eaten in PJ’s, robes, and Slippers 🙂

After breakfast, we got ready then had a nice drive to work in Colorado’s beautiful Sunshine morning. Today was a heat wave, temps got up to the 70’s! Just like any other Sunday, this one was hectic as HE**. I kept thinking come on people, get outside and have a picnic, why on earth would you want a hot bagel on such a nice day? I know if I wasn’t working, Court and I would defintely go on a walk to the park, swing on the swing, and talk like we do all the time in the summer~ 

Now, Courtney and I are not really Chip girls, but after seeing Pirates Booty chips everywhere on the Internet and in local health food stores, we got some of our own to try. And this was the cute little treasure chest they sent us.  

 It was filled with a variety of single serving bags.

The flavors we got sent were:

  • Aged White Cheddar
  • Sour Cream & Onion
  • Veggie
  • New York Pizza
  • Sea Salt & Vinegar

 

 

 

  We were not in much of the lunch packing mood last night, so we just threw together a healthy fun lunch this morning before work. We each had a Garlic Chicken White pizza Lean Pocket, split a bag of sour cream & Onion Pirate Booty chips, and a clementine.

Verdict: These things are awesome! Little puffs of flavor, and only 130 cals per bag. I was expecting them to be big chips, but they were actually little tiny air puffs. And there is so many in a bag, that it is way more filling than fattening chips. They tasted like Lay’s Sour Cream and Onion, but instead you get a baked healthier, more filling version!

 After work, Cravings for a yogurt mess like yesterdays kicked into high gear. So we made one using another Kardea bar.

 In the mix:

  • 1 container of Strawberry White Chocolate yogurt
  • granola
  • 2 animal crackers
  • kashi go lean
  • 1/2 of Kardea Cranberry Almond Bar

 Todays Flavor was Cranberry Almond.

 

 Verdict: These are so good heated up for about 15 sec in the microwave, because they melt slightly, and mix in the yogurt well since they are so soft. I liked the cranberry flavor, but so far Chai is still the best.

 Our older sister Karstee likes to cook Sunday’s, since she has the weekends off from work, so she made PF Chang’s inspired Chicken Lettuce Wraps.

  • 3 tablespoons oil
  • 2 boneless skinless chicken breast
  • 1 cup of water chestnuts
  • 3 tablespoons chopped onions
  • 1 teaspoon of minced garlic
  • 4/5 Romaine lettuce leaves

Sauce:

  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon rice wine vinegar
  1. Bring oil to medium heat in a large frying pan
  2. Saute Chicken breast for 4-5 min till done
  3. Remove Chicken from pan and cool
  4. Keep oil in pan, and remain hot
  5. Mince water chestnuts into pea size
  6. Prep sauce in a mixing bowl
  7. When chicken cools, cut into very small chunks
  8. With pan still on high heat, add another tablespoon of oil
  9. Add chicken, onions, garlic, and water chestnuts to pan
  10. Add sauce to pan, and saute for a few minutes
  11. Serve in Lettuce “Cups”

 Served alongside were Sesame green beans from “The Silver Spoon” cookbook,  carrots with Garlic humus, and a Pomade.

 

 

 That brownie was so effin good last night from Lenny&Larry’s, so we were uber excited to dig into the Peanut butter Cookies.

 Verdict: Wow, this company sure knows how to make a mean cookie! And brownies 🙂 In general, they turn the unhealthy into nutrition filled.

It was taken out of the package, and promptly placed on a paper towel to be microwaved for 45 sec. Baked packaged goods, just simply taste right out of the oven when you heat them up, it is crazy.
