Alot on the mind lately

We conquered the middle of the week yo! With our per usual late day Wednesday, we got to sleep in till 5:30. It may not seem like sleeping in to some of you, but when you get up at 5 AM everyday ITS HUGE!!! Last night the weather changed in a big fat hurry, and we woke up with freezing temps, and a snow-covered ground. With summer break just a few weeks away that may seem odd to you, but nope not for COLORADO. lol ūüôā This morning, we were kinda stumped on what to make for breakfast, but then thought of some of Kath’s bowl of oats for inspiration. We basically went off of her butterscotch chips, PB, and yogurt idea, then just threw in whatever sounded good. In the end, all was random, but all was good‚ô• As eating b-fast we looked through all the grocery ads for the best deals this week.

Today was our short day, so after getting out at 10:45, we went on a fast grocery shopping trip to Albertson’s with the Mommasita, then did a little more when she rushed off to work. We got her into Luna bars, and now I swear she is an addict. You cannot go grocery shopping without picking a few up, otherwise wheew¬†someone will be mad. lol While out shopping in the freezing temps, Court and I stopped into Carino’s Cafe for small NF Dulce de Leche Latte’s for an afternoon snack along with a cookie at the grocery store bakery. On the glass it says “Hey Kids take a Cookie, they are FREE!” So you know what being the kids we are, we snatched those little Pink Cherry Chip cookies right up. And let me tell you WOW, it was a bad for you good cookie‚ėļ

After the Grocery Extravaganza, we came home full of energy and ready to do a FREE OnDemand¬†workout. Under the Most popular section, we chose a 43 min video that was fun and new. I liked this workout, because it incorporated¬†Cardio, Strength, and floorwork. And it was put in separate intervals and rapidly changing, so you never got bored. Our older sister Ashley got home when we were in the middle of the Video, so she sat on the Couch and had an awesome conversation with us about this Summer/Future plans while we finished up the last 10 minutes. With all this Summer excitement going on, after reading Courtney’s Post the other day about “Goals for Summer,” and having a long talk with our older sister, we began to really think about our Summer goals.

On the mind, and Want to accomplish:

  1. Pay off more than half of our car to DAD, so basically upping our hours at work
  2. Take a Hot Yoga class! We have never done that, and it sounds awesome ūüôā
  3. Figure out plans for College (Scholarships, Internships, Universities, Job, etc)
  4. Move forward with the plans Ash, Court, and I talked about today
  5. Run farther than I’ve ran before
  6. Go to places I have wanted to see/eat at in Colorado for a long time
  7. Take multiple hikes
  8. Ride my new old school bike to the grocery store, and then take home groceries in my cute little basket on the front
  9. Spend a whole day at the beach (Make a sandcastle, play in the water, lay in the sand)
  10. Make this years camping trip more enjoyable than last years
  11. Buy Chalene Johnson’s Turbo Fire, and complete the High Intensity Program
  12. Get awesome Senior Pics
  13. Take many naps
  14. Go swimming
  15. Relax by the pool
  16. Have BBQ, and make SMORES ūüôā

 

Breakfast: Oats and Carmel Lipton Tea 

 For lunch we used our Bolani Yogurt Cheese Sauce, and some leftovers in the fridge to make a Wrap.

  • 1 La tortilla Factory Large Whole grain tortilla (80 cals)
  • bolani sauce
  • spinach
  • tomato
  • low sodium turkey
  • sprouts
  • avocado

 

And to go along with that Court and I split this Veggie Pirate Booty Single serve bag.  

 **Verdict: I was not to sure what to expect with Veggie flavored chips, but they were absolutely delish! 

 And with the purchase of the first Cherries of the season, we had to incorporate some of those 

 

 With all this cold air, some High Fiber Progresso Soup came to the rescue! 

As we as our Very Last Corn muffin VITA TOPS! tear tear ūüė¶

What a good hardy meal, that defiantly satisfied and warmed us right up.  

With our¬†“Get your workout done” mindset, we have already planned to wake up early tomorrow and do Jillian Michael’s new Yoga Meltdown video before school. As early as that may seem, it will all pay off in the afternoon, when school and our workout is already done for the day. That is how I see it anyways. lol I am more of a morning girl when it comes to working out, and Court is totally opposite. I have to drag her butt out of bed.

Word to the Wise: Plan your workout out tonight, and have a plan for your meals. Randomness= wasted time, laziness, sometimes bad choices, and of course PROCRASTINATION! Workout and make healthy choices for you. Think about why you want to be healthy, and what benefits you will get out of it. Stop thinking about the person you want to be, and actually become that person. Take a risk, if you never feel uncomfortable, nothing will change.

Most of all, Have a lovely night and get some sleep, because tomorrow is a new Day!

Pancakes make sunday’s so much better!

Lately we have not had to be to work until 8 AM, meaning we get an extra glorious hour of sleep! Omg, seriously summer you are so close but yet still so far away. When your little, you never understand why your older siblings would sleep for so many hours in the day, but when you finally reach those years yourself, you absolutely love love love sleep. While at Target the other day, I spotted this shimmering box of Pumpkin Pancake mix. WHAT! And it was on sale for $3.

 We used this mix as a basis, then added our own creation, instead of following the boring per usual route on the back. What we did was:

Serves 1:

  • 1/2 cup of Pancake mix
  • 2 Tablespoons of unsweetened applesauce
  • 1/2 Tablespoon of Wheat Germ
  • 3 Tablespoons of unsweetened Almond milk
  • 1/4 cup of water, or to pancake like consistency
  • Lots of cinnamon
  • 1 Tablespoon of silvered almonds

*Makes about 4 small/medium size pancakes

 Then, each one was topped differently, but all with nuked cinnamon agave apple chunks. They were topped as follows:

  1. Skippy All Natural Chunky PB, and Pumpkin Butter
  2. Dark Chocolate PB and trail mix
  3. Honey Greek yogurt and granola
  4. sugar-free syrup

After breakfast, we got ready then had a nice drive to work in Colorado’s beautiful Sunshine morning. Today was a heat wave, temps got up to the 70’s! Just like any other Sunday, this one was hectic as HE**. I kept thinking come on people, get outside and have a picnic, why on earth would you want a hot bagel on such a nice day? I know if I wasn’t working, Court and I would defintely go on a walk to the park, swing on the swing, and talk like we do all the time in the summer~¬†

Now, Courtney and I are not really Chip girls, but after seeing Pirates Booty chips everywhere on the Internet and in local health food stores, we got some of our own to try. And this was the cute little treasure chest they sent us.  

 It was filled with a variety of single serving bags.

The flavors we got sent were:

  • Aged White Cheddar
  • Sour Cream & Onion
  • Veggie
  • New York Pizza
  • Sea Salt & Vinegar

 

 

 

  We were not in much of the lunch packing mood last night, so we just threw together a healthy fun lunch this morning before work. We each had a Garlic Chicken White pizza Lean Pocket, split a bag of sour cream & Onion Pirate Booty chips, and a clementine.

Verdict: These things are awesome! Little puffs of flavor, and only 130 cals per bag. I was expecting them to be big chips, but they were actually little tiny air puffs. And there is so many in a bag, that it is way more filling than fattening chips. They tasted like Lay’s Sour Cream and Onion, but instead you get a baked healthier, more filling version!

 After work, Cravings for a yogurt mess like yesterdays kicked into high gear. So we made one using another Kardea bar.

 In the mix:

  • 1 container of Strawberry White Chocolate yogurt
  • granola
  • 2 animal crackers
  • kashi go lean
  • 1/2 of Kardea Cranberry Almond Bar

 Todays Flavor was Cranberry Almond.

 

 Verdict: These are so good heated up for about 15 sec in the microwave, because they melt slightly, and mix in the yogurt well since they are so soft. I liked the cranberry flavor, but so far Chai is still the best.

¬†Our older sister Karstee likes to cook Sunday’s, since she has the weekends off from work, so she made PF Chang’s inspired Chicken Lettuce Wraps.

  • 3 tablespoons oil
  • 2 boneless skinless chicken breast
  • 1 cup of water chestnuts
  • 3 tablespoons chopped onions
  • 1 teaspoon of minced garlic
  • 4/5 Romaine lettuce leaves

Sauce:

  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon rice wine vinegar
  1. Bring oil to medium heat in a large frying pan
  2. Saute Chicken breast for 4-5 min till done
  3. Remove Chicken from pan and cool
  4. Keep oil in pan, and remain hot
  5. Mince water chestnuts into pea size
  6. Prep sauce in a mixing bowl
  7. When chicken cools, cut into very small chunks
  8. With pan still on high heat, add another tablespoon of oil
  9. Add chicken, onions, garlic, and water chestnuts to pan
  10. Add sauce to pan, and saute for a few minutes
  11. Serve in Lettuce “Cups”

¬†Served alongside were Sesame green beans from “The Silver Spoon” cookbook,¬† carrots with Garlic humus, and a Pomade.

 

 

¬†That brownie was so effin¬†good last night from Lenny&Larry’s, so we were uber excited to dig into the Peanut butter Cookies.

¬†Verdict: Wow, this company sure knows how to make a mean cookie! And brownies ūüôā In general, they turn the unhealthy into nutrition filled.

It was taken out of the package, and promptly placed on a paper towel to be microwaved for 45 sec. Baked packaged goods, just simply taste right out of the oven when you heat them up, it is crazy.
