Hey Monday ain’t over yet!

 And Monday continues…

Good evening all! It feels great to know that Monday’s heftiness has finally dwindled down. After our workout today, Whit and I refueled with a Green Monster! And we used up all the rest of the spinach, so now we need to restock ASAP. Today it was supposed to be really warm, but all day it just looked gloomy like it was going to rain, which it never did. LAME, don’t you just love afternoon rain? I know I do, esp. in Colorado.

Once the monster’s were all in the belly, Whit had the fabulous idea for a nap! And it felt so good, afternoon naps are the best 🙂




Our mom had today off from work, so off course the house was spotless, and Dinner was made. She made Spaghetti, Carb heaven 🙂 Since we were missing some Texas toast Garlic Bread, we opted to make our own on Sandwich thins. And some Veggies were thrown in too.






After dinner, we all cleaned the kitchen, packed lunches for tomorrow, and heated up dessert. Tonight’s Specialty another Lenny and Larry’s Cookie, but these one’s were Oatmeal Raisin. Our mom was jealous, so we gave her a chocolate chip one. Her verdict “This is so good, soft, and I am love how big it is!”



And just as their other products, this one was equally good, so far the Winners are the Cookies n’ Cream brownie, and the PB cookie. Yummy carbs tonight, for some hard-working bodies.


We just got done reading the first Chapter of this book called “Woman Warrior” that we have to read for Am. Lit Honors, and it is kinda weird so far. But next up is “The Kite Runner,” and everyone seems to like that book, so it should be a good finisher to the year.


Well, lunches are packed, HW is done, so now the question is what to make for B-fast tomorrow. So many Choices! What a dilemma. Lol


To answer a FAQ of today Do you guys eat the same meals everyday?

A: For the most part, because we are together pretty much 24/7, and we like most of the same meals, so it works out easier to cook together, and it is fun!

Pancakes make sunday’s so much better!

Lately we have not had to be to work until 8 AM, meaning we get an extra glorious hour of sleep! Omg, seriously summer you are so close but yet still so far away. When your little, you never understand why your older siblings would sleep for so many hours in the day, but when you finally reach those years yourself, you absolutely love love love sleep. While at Target the other day, I spotted this shimmering box of Pumpkin Pancake mix. WHAT! And it was on sale for $3.

 We used this mix as a basis, then added our own creation, instead of following the boring per usual route on the back. What we did was:

Serves 1:

  • 1/2 cup of Pancake mix
  • 2 Tablespoons of unsweetened applesauce
  • 1/2 Tablespoon of Wheat Germ
  • 3 Tablespoons of unsweetened Almond milk
  • 1/4 cup of water, or to pancake like consistency
  • Lots of cinnamon
  • 1 Tablespoon of silvered almonds

*Makes about 4 small/medium size pancakes

 Then, each one was topped differently, but all with nuked cinnamon agave apple chunks. They were topped as follows:

  1. Skippy All Natural Chunky PB, and Pumpkin Butter
  2. Dark Chocolate PB and trail mix
  3. Honey Greek yogurt and granola
  4. sugar-free syrup

 The perfect cozy Sunday morning breakfast eaten in PJ’s, robes, and Slippers 🙂

After breakfast, we got ready then had a nice drive to work in Colorado’s beautiful Sunshine morning. Today was a heat wave, temps got up to the 70’s! Just like any other Sunday, this one was hectic as HE**. I kept thinking come on people, get outside and have a picnic, why on earth would you want a hot bagel on such a nice day? I know if I wasn’t working, Court and I would defintely go on a walk to the park, swing on the swing, and talk like we do all the time in the summer~ 

Now, Courtney and I are not really Chip girls, but after seeing Pirates Booty chips everywhere on the Internet and in local health food stores, we got some of our own to try. And this was the cute little treasure chest they sent us.  

 It was filled with a variety of single serving bags.

***Pirate Booty Products are all natural, baked, trans-fat and gluten-free, Vegan Friendly, and half the fat of other leading baked chips. ***

The flavors we got sent were:

  • Aged White Cheddar
  • Sour Cream & Onion
  • Veggie
  • New York Pizza
  • Sea Salt & Vinegar




  We were not in much of the lunch packing mood last night, so we just threw together a healthy fun lunch this morning before work. We each had a Garlic Chicken White pizza Lean Pocket, split a bag of sour cream & Onion Pirate Booty chips, and a clementine.

Verdict: These things are awesome! Little puffs of flavor, and only 130 cals per bag. I was expecting them to be big chips, but they were actually little tiny air puffs. And there is so many in a bag, that it is way more filling than fattening chips. They tasted like Lay’s Sour Cream and Onion, but instead you get a baked healthier, more filling version!

 After work, Cravings for a yogurt mess like yesterdays kicked into high gear. So we made one using another Kardea bar.

 In the mix:

  • 1 container of Strawberry White Chocolate yogurt
  • granola
  • 2 animal crackers
  • kashi go lean
  • 1/2 of Kardea Cranberry Almond Bar

 Todays Flavor was Cranberry Almond.


 Verdict: These are so good heated up for about 15 sec in the microwave, because they melt slightly, and mix in the yogurt well since they are so soft. I liked the cranberry flavor, but so far Chai is still the best.

 Our older sister Karstee likes to cook Sunday’s, since she has the weekends off from work, so she made PF Chang’s inspired Chicken Lettuce Wraps.

  • 3 tablespoons oil
  • 2 boneless skinless chicken breast
  • 1 cup of water chestnuts
  • 3 tablespoons chopped onions
  • 1 teaspoon of minced garlic
  • 4/5 Romaine lettuce leaves


  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon rice wine vinegar
  1. Bring oil to medium heat in a large frying pan
  2. Saute Chicken breast for 4-5 min till done
  3. Remove Chicken from pan and cool
  4. Keep oil in pan, and remain hot
  5. Mince water chestnuts into pea size
  6. Prep sauce in a mixing bowl
  7. When chicken cools, cut into very small chunks
  8. With pan still on high heat, add another tablespoon of oil
  9. Add chicken, onions, garlic, and water chestnuts to pan
  10. Add sauce to pan, and saute for a few minutes
  11. Serve in Lettuce “Cups”

 Served alongside were Sesame green beans from “The Silver Spoon” cookbook,  carrots with Garlic humus, and a Pomade.



 That brownie was so effin good last night from Lenny&Larry’s, so we were uber excited to dig into the Peanut butter Cookies.



 Verdict: Wow, this company sure knows how to make a mean cookie! And brownies 🙂 In general, they turn the unhealthy into nutrition filled.

It was taken out of the package, and promptly placed on a paper towel to be microwaved for 45 sec. Baked packaged goods, just simply taste right out of the oven when you heat them up, it is crazy. 2,000 calories What?

Last night, it was our dads night to cook dinner. Now let me tell you, I love this man to death, but he only knows how to cook a few things. So rather than spending his whole night slaving over dinner, he chose an easy route to start his weekend and bought pizza for the whole family. Naturally we orderd from Pappa Johns because of the buy any size, as many toppings as you want for only $10! Pictured below is the best darn pizza a girl can ask for: an original crust, with tomatoes, bellpeppers, onions, and grilled chicken.

**My family always opts. for chicken instead of pepperoni because  processed meats like pepperoni and sausage offer little to no nutritional value and contain lots of fat, calories and sodium.**

 NOTE: That little puddle of yellow is not grease, it is Garlic Sauce! 🙂


This morning Whit and I were up before dawn and craving our Bolthouse Chai Tea again.  Instead of using it in oats, this time we made it into iced chais! Out of all the chai tea syrups and mixes this one has beaten them all for the best.

This morning’s bowl of overnight oats were of course made in our easy lunchboxes! I can not get enough of these things. You can use these for virtually any meal. It really helps especially on a day like Saturday when we have work becaue time is very limited until we have to be to work. Preparing my overnigth oats and the mixin’s the night before is a big TIME SAVER

 These oats were another dessert inspired, Strawberry Cheescake Overnight Oats 😛 I love that Target has so many unique flavors of yogurt to choose from.

 And THIS is the after. In Jessica’s words, this could be called the Yogurt Mess! 

 Lunch was also packed last night… a mixed greens salad with cauliflower, carrots, dried cherries, and rasperry vinagarette. Also on the side is a little Cutie in the right corner. I love these little guys. One of my friends recently told me that she has her Cutie’s with Nutella. Maybe I will have to give it a try!  

 Today was our first day actually trying Raspberry Vinagarette on veggies, instead of fruit and I absolutely loved it.


After an eight our work day at the big ‘ol Einstein’s, Whit and I were famished. We had to sit in the 4:oo traffic the whole way home, but once again the nice weather allowed us to roll down the sun roof and jam to some good tunes. Letting your hair go all crazy from the wind and screaming song lyrics at the top of your lungs is the best stress reliever after a hard day at work. Hey we are only teenagers, but it is great tool for adults to try too lol!

Our afternoon snack before Insanity was yogurt mess #2 of the day. This time with Honey Almond yogurt. This is one of my top fav. flavors from tarjay 🙂


Whit and I once again let our Chai craving get the best of us and we could not resist. We split this bar and crumbled it over our yogurt. These bars are known for lowering cholesteral levels. Here is an excerpt from their website:

“Each of our great tasting snack bars delivers 50% more heart healthy soluble fiber than found in oatmeal, and each provides 1 gram of cholesterol lowering plant sterols” (That is pretty impressive considering most of us eat oats every day!)

 These bars reminded me of lara/clif bars except for half the calories(150 not to shabby!)


 VERDICT: Very soft. I could taste all of the great spices. It tasted like I was eating dessert. For its rich taste and awesome nutritional value, I would most definitly purchase.

 Dinner tonight was some more pizza galore, but this time with an added salad!

Whit and I happened to find this package of treats to review yesterday. Thanks Lenny and Larry’s 🙂

 The first dessert little bundle of joy chosen for tonight was the COOKIES AND CREAM BROWNIE(what a cool flavor huh!). Here is a little info. about these products:

*Each one contains 20 grams of protein
*all natural
*zero grams trans fat
Here is an excerpt from their website as to why there products are good for you:

Well it is almost time for me to hit the sack for another long eight hour work day tommorow, but first let me leave you with an interesting fact. Our older sister Ashley has been trying to lose weight and get into shape, so she recently purchased the body bug. She also works at Einstein Bros(I know what a small world right lol), but anyways after wearing it today she burned a total of about 2,000 calories. Crazy huh! Who knew running around frantically at work with bagels, could be such a great workout. No wonder I am always more hungry on work days.
