Day 2 of a less stressed week…

How do Whit and I do it?

We got a little INSANE this morning with our Insanity Max Cardio Conditioning & ABs video. It was an hour of a much-needed sweat sesh. Afterwards… I was felt so accomplished! These videos will help you get the results in 60 days of which would take most people a whole year!  

I do not know how I would make it through stress with out exercise. It is just one of the few things that keeps me sane! 🙂

Like the people in the video Whit was exhausted by the end!


Oh and you cannot forget to refuel yourself with a good hearty breakfast!

  • In the Mix:
  • 1/3 cup oats, 1/3 cup almond milk, 2/3 cup water
  • 2 Tbs. egg-whites, 2 Tbs. coffee
  • 1/2 splenda(out of stevia 😦 ) packet
  • capful maple extract
  • sprinkle chia/flax/cinnamon

Top With:

 Mmm… Muffin Oats is the best!!! Have you guys made muffins lately? If so, what kind?


 Lunch today was yet another fruit salad(the best kind!)… but this time with raspberries 🙂

Something about Fall just puts me in a salad mood I guess!

And to pair with our salads was a slice of Carrot Raisin Manna Bread shmeared with pumpkin butter.

Verdict: I was much more impressed with this bread than the cinnamon date. It definitely hit the carrot-cake spot. Now all I need is some coconut butter to spread on top. If you have got a Carrot Cake obsession too then this bread is definitely a winner!

****Well this is all that we have time to post with today. We have our Humanities class tonight. I think maybe I will save my 5 hour energy for our Thursday night class. Insanity gave me a lot of energy so hopefully I will make it through tonight! Breakfast is already prepared and in the fridge for tomorrow. It involves ginger and lemon. Any guesses? Well check back with ya later. 


Goal for the week: “NO Stress”

 On the menu: Espresso Chocolate Chip Muffins: Created by this lovely lady.

Espresso Chocolate Chip Muffins
1 cup buttermilk
1/3 cup canola oil
2 large eggs (beaten)
(or 2 Tbsp instant coffee)
1/4 tsp salt
1. Preheat oven to 385F
2. In a bowl, beat together eggs, sugar, milk, oil, and espresso
3. In a separate bowl, blend flour, powder/soda, and salt
4. Gently pour wet ingredients into dry
5. Fold together, remembering not to over mix
6. Before last few stirs, fold in your chocolate chips
7. Scoop + over flow batter into muffin tins
8. Place in oven and reduce temperature to 360F
9. Bake for 30-35 minutes
10. Remove and let cool 
Instead of making 9 like Kelsey did, we made 12! 🙂

 Holey Canoli, this girl can bake! Everyone loved them, and they made the perfect breakfast.

 Make them, if you have not yet. We highly recommend this recipe. And if you want an even bigger muffin, there is always the option to make 9 like her.

 And for Jessica’s Luna Movement we did a little Luna lovin’ for snack time at school. teehehe! Blueberry bliss is like a struesel topped blueberry muffin.

Court wanted the same flava… 

 And the happy girls were off to school!

We were busy bees in every class, and wouldn’t ya know, TIME FLEW BY! Before we knew it, we were at home watching America’s Next Top Model while making Lunch.

On the menu:

  • Pear Butternut Squash Salad
  • Spinach Mushroom Lean pocket

 In the mix:

  • romaine
  • butternut squash
  • pear
  • cinnamon
  • raisins
  • goji berries
  • walnuts
  • flax seeds
  • annies raspberry vinaigrette


And to round off this evening all of us girls went and got registered for Race for the Cure. Dinner involved a little savory and sweet. An egg sammie, and sweet tatar did the trick! 

 Have a great night ladies and gents. I don’t know about you, but I gotta go hurry up and finish my math HW, before 90210 comes on. And then Court and I are having a Dawson’s Creek marathon. Here’s to a less stress week! Who’s with me? lol
