A visit from the Nut butter fairy

Ello Mates!

     This mornings fabulous breakfast was something similar to this Lemon Chiffon Baked Oats from months ago which is also on our updated recipe page if you guys have not visited it in a while.

Baked Lemon Ginger Oats

Serves 2:

  • 1 cup of Old Fashioned Oats
  • 1 mashed banana
  • 1 cup water
  • 1 tsp chia seeds
  • 1 tsp flax seeds
  • squirt of lemon juice
  • 1/2 container of Lemon yogurt (3oz)
  • Sprinkle of coconut
  • Grated Crystallized Ginger
  • Silvered almonds


  • 2 gingersnaps
  • 1/4 cup of Fiberone Cereal
  • 2 tbs Cinnamon Sweeties Cereal

Cook in the oven at 375 degrees for 20-25 min

  • Preheat the oven to 375, In a large mixing bowl, mix oats, water, mushed banana, lemon, chia, flax, and yogurt
  • Spray a small (8″ by 8″) pan with non-stick spray. Layer the bottom with Smashed gingersnaps and cereal
  • Pour all of the oat mixture over the mashed gingersnap cereal crust.
  • Top with Silvered almonds, coconut, and grated Crystallized Ginger


    Beautiful and Delicious.


     Todays snack for school featured yet again some of our much loved LUNA bars! Todays flava was Vanilla Almond.

     Can you see my little Leaf necklace? Isn’t it adorable! lol

    When Court and I finally made it home from school, there was a HUGE amazing package waiting on the porch for us! Can you say Christmas in September? lol This generous package was from the lovely people over at Artisana.

    Check out the loot. It is seriously a girl’s Nut butter Mekka. OMG 🙂

     The beauties well surely be put to good use.

     We each got to pick a Nut Butter flavor, and here were the picks for our BIG jars. I was dying for the Macadamia butter after seeing it on Gracie’s blog, and Court just had to have her classic coconut Butter.

     Shall we check out the stats?

     So far we’re thinking about using this one as a good German Chocolate Oat combo. Any good ideas?

    Maybe we will have to head over to Chocolate Covered Katie’s. After all, she is the Chocolate and Artisana butter Queen! 

     I really wish Macadamia nuts were not so expensive, because anything with Macadamia Nuts is fabulous. Okay, now I am craving a White chocolate macadamia nut cookie. Oh and I just got a genius Oat Creation idea.

     Lunch consisted of a Turkey and Cheddar melt with an apple drizzled with Macadamia Butter.

     Grilled is Mandatory of course 🙂

     Macadamia Butter Verdict: Fantastic aroma and consistency the moment that you open the jar. Court and I were so tempted, that the first lick was simple straight finger dipping. Oh, and the Apple Macadamia butter combo was perfect 🙂

     After lunch we completed Level 1 of shredding it with weights, and then had some good ol’ homework time, which is never fun! There was Psychology terms, reading the Great Gatsby, and studying for Pre-calc. My brain is officially fried. lol

     With a Pumpkin and sweet tooth craving tonight, Court whipped us up some delish Pumpkin pancakes

    Twas a good night. Tomorrow is a work day from 7-1, then off to art at 6. Have a fun night guys!


    Pumpkin is being released everywhere…

    In case you have not noticed, Libby’s Pumpkin has made its way back to the grocery store. Praise the Lord! I do not know about you guys, but it was getting tough to find Pumpkin. All that I could find was the organic brand which cost and arm and leg for a small can, or Stokely’s GIANT 32 0z can! Well you can never get enough, so Whit and had just been buying Stokely and freezing it.

    Not only is Libby’s back, but so is everything Pumpkin at Einstein’sat least at our Einstein’s. We had and early release. Remember how the big day was not supposed to be until Sept. 29th? Well people could not stop asking about it, so we gave them what they wanted. 😉   

    The release brought this….




    Well in other news nothing else too exciting really happened this week, except Whit and I managed to watch the whole first season of Dawson’s Creek on DVD. You are probably thinking, ARE THEY CRAZY? Well, the first season is only 12 episodes so it only averaged about 2 episodes a night. You get so tired during the week, and it is not like you want to go out and spend money any way, so some great advice to you guys is go buy a season of a show to watch. It is great to have when you just want to relax and have down time.  

    Next weekend is Race For The Cure! Are you going to participate. All of us girls in the family have made it tradition. For the past few years we have signed up together. It is always such a memorable experience. I love waking up early to cool crisp Fall air, going to Starby’s, getting some free stuff before the race, and then beginning to walk to “I run for Life”. The whole day just gives me chills. I love being able to participate in such a great cause.




    Here’s a few eats of the week from TE kitchen:


    Jillian Michael’s Master Your Metabolism: Almond-Crusted Chicken

    SERVES 4

    • 1/2 cup unsalted almonds, toasted
    • 2 tablespoons extra-virgin olive oil
    • 3/4 teaspoon grated lemon zest
    • 1 tablespoon fresh lemon juice
    • 3/4 teaspoon dried rosemary
    • 1 garlic clove
    • 1/4 teaspoon salt
    • 4(4-to-5 ounce) boneless, skinless chicken breast halves

    Preheat the oven to 425 degrees
    In the work bowl of a food processor, place the almonds, olive oil, lemon zest and juice, rosemary, garlic, and salt. Process until coarsely chopped; the mixture will be a thick paste.
    Arrange the chicken breast halves in a baking dish. Divide the almond paste and spread on the breasts; pat down to cover each breast completely.
    Roast in the oven until cooked through, about 10 minutes. Loosely tent with foil and let stand for 5 to 10 minutes before serving.

    This chicken made the whole house smell amazing. Right when my mom walked in the door from work she said that she could smell something yummy. Seriously guys this is such a gourmet dish that is so simple. The whole family loved it!

    Served alongside this meal was also some Cornbread. We got this recipe out of our Xagave book. It has got actual corn in it, which made it that much better 🙂 

    Makes 16 servings

    • 4 tbsp. melted butter(I used Earth Balance)

    • 1/4 cup applesauce(I used unsweetened)

    • 1 egg

    • 1 cup low-fat milk

    • 1/3 cup Xagave(I just simple used agave nectar)

    • 1 cup cornmeal

    • 1 cup whole-wheat pastry flour

    • 3 tsp. baking soda

    • 1 tsp. salt

    • 1/2 cup corn, chopped


    • Preheat oven to 350 degrees. Lightly grease 9″ square pan. Beat together butter, applesauce, egg, milk and xagave until combined. Add cornmeal, flour, baking soda, and salt and beat until smooth. Stir in corn. Pour into greased pan. Bake for 20 to 25 minutes until a toothpick inserted comes out clean.


    I also chopped butternut squash for the very first time. It is in season for Fall, and Whit and I have never prepared our own. What I learned…. is butternut squash is extremely hard to cut. Luckily, I found a sharp knife that was able to do the job.


    Whit steamed the butternut squash with some apples, then topped them off with a drizzle of maple syrup and cinnamon. It was a warm little ending to this meal.

    Remember way back when we told you about Target’s Archer Farm All-Natural Dark Chocolate Pb? Target’s brand tastes like Reese’s PB cups… but SunLand’s literally taste like frosting! Seriously, I was expecting it to come out all runny like Target’s but instead it was scoopable just like FROSTING 🙂


    This PB is craazzy good. Whit and I topped one of our many yogurt messes of the week with it.

    I would recommend this PB for:
    Topping cupcakes
    -Making Fudge
    -Banana Split
    -On a vita muffin or rice cake(maybe with some fluff!)



    Berry Patch Protein Oats have been a serious obsession this week. Whit and I had them 2 days in a row! Thanks Meg, this recipe is the best 😉

    Plenty of snacks have been packed for on the go. This was a pear and granola thin!

    Oh and we bought some more 5 hour energy for our Thursday night class! You better believe I pulled another all nighter and got my h.w. done.

    This was probably the second best dinner of the week:

    This was a La Tortilla Factory tortilla filled with the new Bleu Cheese Laughing Cow, shredded chicken that was drenched in hot buffalo wing sauce, jalapeno, and peppers. Then we put it on the press. I love buffalo pizza so this was just an alternative.  


    We made Gracie’s PB Apple Crisp!

    More Berry Patch Oats with the addition of banana and grapefruit juice.

    Eggs, Manna Bread, Van’s Belgian Waffle.

    Pear & Butternut Squash salad with corn bread.

    Tofu Shirataki Noodles with chicken sausage, veggies, alfredo sauce, pesto, and toast.


    Vanilla Siggis, mixed with Toffee Fudge Whey Protein, SF Cheescake Instant Pudding, then we froze it. Siggi’s is so thick that it worked perfect as fro-yo. 

    And finally…. overnight oats!

    This week is going to be hectic, but that is ok because the weeks are flying by! Even though tomorrow is Monday… just try to look at the positive. Trust me just take it day by day and you will get through it.

    Going a little pumpkin crazy lately

     Hello There.

    It feels as if life is never going to slow down. When you have some where to be everyday or an assignment is due every class then it is go, go, go! Well here is a quick recap of our week:

    Mon.- No school because of labor day, but we had to go to work instead.

    Tues.- No school again because it was an “A” day so Whit and I went for a run then worked on homework.

    Wed.- Went to school then watched the premiere of the new show HELLCATS! The first episode definitely drew me in. It kind of reminded me of One Tree Hill, but it starts out in college.  

    Thurs.- Did Insanity’s Pure Cardio and got a killer cramp. I felt so sick, my stomach felt like it was on fire, and then I started getting heart burn. Not good!
     NOTE TO SELF: If I am ever going to do that intense of a workout then I must wait at LEAST an hour before working out.
    After that we went to our booorrring Art Appreciation class.

    Fri.- School and christmas shopping at the mall and a toffee mocha latte from Starby’s to finish the perfect night.

    Sat.- Worked 8-close, the place was jam packed, and I was a sweaty mess trying to make a gazzilion egg sandwiches. Why can’t people just make their own breakfast on the weekend? lol.

    Sun.- Went to church, watched football, did homework, watched VMA’s. Then around 4 pm we got a phone call about crime in the neighborhood and to go into the basement until further notice. It turns out a storage container was mistaken for a possible pipe bomb. All of the streets in our neighborhood were closed off for hours! Don’t ask me why it took them so long to figure out if was not an actual bomb. Craziness.  

    Today- Worked out then lounged all day. I was at least happy for one day of relaxation. I cannot wait till later because the new season of 90210 premieres. Who’s gonna watch it? The season finale has drama out the wazzoo. Namoi was raped, Annie finally tells her parents about her hit-and-run incident, her parents are pretty much splitting up, Jasper sets Liam’s boat on fire, ect. Clearly I am excited! 

    The fuel Lately has consisted of:

    Strawberry overnight oats

    Spinach Bolani with Veggies

     Shakeology Overnight oats with Pumpkin spice tea

     Egg-white Turkey Veggie salad with a Pluot

     Welcome back Luna! 🙂 These babies never fail when you’re a hungry monkey at school. lol

    Chicken Taco Veggie Salad

     New to us Product: My Weigh

     This scale rocks! We decided to test it out first with our Pancake mix. A 1/2 cup serving is 61g, so we set the scale to the grams measurement.

     First up, weigh the measuring spoon. (37g)

     Both the mix and spoon is 98g-37g=61g. Look at how exact that is!

     Viola, perfect serving of pancake heaven 🙂

     When Fall comes Whit and I look forward to PUMPKIN! Clearly we went a little crazy 😛 This is only a small fragment of what we bought this week.

    Everything we bought was:

    • pumpkin syrup
    • pumpkin butter
    • pumpkin tea
    • pumpkin coffee
    • pumpkin ice cream
    • candy corn

     We cannot get enough of it. If you have a love for Pumpkin like us…. then GUESS WHAT!?! Our work is coming out with a pumpkin Crunch Bagel. Sept. 29th is the big day. With that said cheers to this upcoming season 🙂


    The weather has been perfect lately, not too hot and not too cold…. in other words perfect bike riding weather.

     Whit and I took our cruisers out for a spin on Friday afternoon. I ♥ my pink cruiser.

     Man do we know each other or what! Remember when we surprised each other with these for our 17th b-day last year?
