Happy Easter!!!!…=)

SUNDAY 4/4-

Whit and I decided to take easter off from work. It felt glorious to finally have a Sunday to sleep in and go to church. The last time we did that was over x-mas break. We slept in until about 9 am, then we came down stairs to hurry up and make breakfast because we had to be out of the house by 10:30. The house was unusually quiet because our mom was at work, our dad was asleep because he just barely had lasik on Friday, and our two older sisters were still asleep. It was weird it did not even feel like a holiday.   

 For breakfast Whit and I whipped up some Monkey Brains Blueberry Oats.

 We topped our oats with Brazil Nuts, blueberries, banana, and pb. It is weird, but anytime I have a bowl of blueberry oats mixed with brazil nuts it tastes like coconut to me. This flavor was something our of the ordinary, but I still think the strawberry one is my fave!

 MMMmmm warm blueberries are the best!

 At church Whit and I got a grande non fat toffee nut latte, and were still pretty stuffed from breakfast by the time lunch rolled around so we kept it simple and light.  

 This was our first time trying the peanut butter & jelly flavor of the lara bars and it is a new fave 😛 We could eat one of these babies everyday lol.

Since Our dad just got lasic surgery on his eyes Friday and he has been sleeping non-stop this whole weekend! He cannot do anything real physical for a week, SO he decided to make this next week his “recovery week” from P90X. He is not a guy to just sit around all weekend, therefore he had the brilliant idea for an afternoon walk. And it was gorgeous outside, but a bit breezy. Could have probably used a light jacket.

 Easter dinner was probably as easy as it can get, Rolls and ham with potato salad. Also not pictured were some Deviled Eggs. Dessert was probably the best part Homemade Carrot Cake using a new product Xagave. Using the cookbook and Agave nectar the company sent us, we made a whole wheat carrot pineapple cake.

 The changes made to the recipe:

-For Cake-

  • Substitute Egg whites for eggs
  • Apple sauce for oil

-For Icing-

  • Use greek yogurt, reduced fat cream cheese instead of butter, and full fat cream cheese

 

 

 Verdict: I love agave in my cake! This carrot cake was so yummy, and no one could even tell the icing was mostly greek yogurt. lol It is great to make your family healthy secretly. Our dad was licking the oThe cookbook is great, and we look forward to trying more delicious Xgave recipes.

After dinner all of us kids watched Did you hear about the Morgans? It was a funny good movie to end the night with. Well breakfast and lunch are packed for tomorrow, and now it is time for these young ladies to get some beauty sleep. lol Hope you had a great Easter=)

Now that’s what I call an easy lunch!

With Dessert themed breakfast creations lately, Court and I made a Red Velvet Cake  Over Night Oats!

In the Mix:

  • 1 container of yoplait Red Velvet Yogurt
  • 1/3 cup of old fashioned oats
  • 1/3 cup of Almond milk

Toppings added in the morning:

  • Cranberry pineapple trail mix
  • Granola
  • Icing (Honey Greek-yogurt, with Coconut butter)

 This combo was perfect, and once again like dessert for breakfast.

 *Overnight oats are super easy to make, and save you so much time in the morning*

 The bags are super cute, and have a zipper which I like instead of Velcro. And even a nice strap for easy carrying.

 

 I just gotta say, I have never packed a lunch so quickly! Instead of digging around for 50 containers to fit our whole lunch in, we can now just put it into one nicely organized container. The size of each compartment really makes it easier to pack the right “portion size.” Alot of people use baggies that they fill to the brim, and don’t realize how much they are eating!  The French Meadow Bakery tortillas we got sent were used to created the main dish if this lunch. In the wrap was riccota, humus, spinach, tomato, and honey glazed ham.

 Verdict: We love all of the grains in this tortilla and it actually fit all of the food inside, without breaking when wrapped up like other tortillas do. Great taste, and the perfect wrap to the food you want to package up inside.

 The sides to this meal included berries, and Cinnamon sugar Stacey’s Chips.

 This easy lunch bag even fit my large watterbottle! That is a bonus to me, because usually I would have to carry that separately.

 Lunch at work was a delicious success=)

 On the way home we tried the Money Brains Blueberry Yogurt bar.

Verdict: Better than the Chocolate Banana flavor, and it had a yummy yogurty icing drizzled all over. Tasted like you are eating something unhealthy, but then you feel great knowing a bar a kid like bar could taste so good and be good for you too! It’s a win-win situation.

 Dinner tonight involved our Panini press to make a grilled ham and cheese with tomato added for some flavor. This was amazing, and healthy too being on multi-grain bread, and no butta!

 That fruit salad was so good the other night, so we had it again, mmm…

 Dessert- Another Chalene Johnson original, Sugar free jello pudding with jello, whip, and strawberries.

 Even though we are 17, you are never too young to color Easter Eggs! All of us kids in the family exploded some color onto these babies tonight. And, I even whipped up a healthier homemade carrot cake to enjoy tomorrow for Easter.

In Health news…

         Kiwi is one of the 12 foods with super-healing power.

Monkey Brains PLEASE!

Tuesday- 3/30

This morning Whit and I needed something quick and easy…..(since we are on day 4 of work) so what did we do? We pulled out our instant Monkey Brain Oats of course! We decided to have a strawberry packet with almond butter would be a good combo :0

*One packet has 170 calories (not bad, you barely have to add any toppings because it tastes so good!)

 Here was the combo with a green tea latte.

 We topped ours with:

  • fresh strawberries
  • banana chips
  • white choc. chips
  • almond butter
  • cinnamon
  • silvered almonds

 So creamy and delish! This is probably my second favorite oatmeal next to pumkin lol.

 

After breakfast we rushed to get to work. Today we did not have to work until 8 am, but surprisingly the road we take to work was far more busier than yesterday when we left earlier. Weird, huh!

 Whit and I decided to try the cinnamon apple chips first. We packed them in our lunch for today at work 🙂

We had the last of our Blueberry Coconut Bars for dessert! These are the best. 

 

 

Whit and I were scheduled until 2:30 today, but labor was too high and we volunteered ourselves to go home. We were both unbelieveably tired, our feet/back/legs all were aching, and we just wanted to enjoy the nice weather! Today Colorado was at a high of 77 degrees. The weather anchors said that was a new record for this time of the year. It felt so good, we were finally enthawing after so many cold days. There was just as much traffic after work as there was on the way there, so we blasted our ipod in the car while we sat there. It made the time fly. Of course Miley was the majority of the songs in honor of her movie “The Last Song” coming out tommorow. I cannot wait!

 

 

When Whit and I got home we wanted to get our Insanity tape done as fast as we could before we could collapse from work. Today’s workout was Max Interval Circuit(55 min. of fun pain)

 

When we were done, we were parched and our muscles were aching. We decided to whip up a protein shake that You Bar sent us to repair and refuel our muscles. This one was the Blended Bliss. We also decided to try a few of our our samples from Doctor Kracker: Cherry Semolina and Apple Crisps 

Our shake included the following :

-We split the You Shake mix
-1/4 cup of plain yogurt
-a spoonful of almond butter
-splash of milk
-handful of frozen stawberries
-handful of ice
 

We also topped our Krackers with pumpkin butter! 

VERDICT: These were sweet little crunchy treats. The cherry one was my favorite, the dried cherries and crunchiness was the best part. Also the pumpkin butter on top made them even better! 

And finally the shake: This shake should be called Strawberry Bliss instead. It was so creamy and tasted like PURE strawberries. 

It felt like I was drinking a stawberry milkshake.  

 

After our snack Whit and I cleaned the house with our mom for a few hours. It was exhausting. Then Whit and I made a repeat of our chicken alfredo pizza from the other day.

 

We split a garlic and her Nann Flatbread to make this beauty lol.
Everyone needs to try this brand, it is literally the fluffiest crust you will ever try for pizza.  

Alongside our pizza we split a can of progresso Light Italian Vegetable. 

 

Well I am off to go and watch some TV and relax, and finally enjoy my spring break. Guess What tommorow no work! You know what that means… we get to sleep in. Yay!
