Holiday excitement/anxiety is…

Slowly creeping up on me!

Does anyone else feel it? Today is November 2nd. I cannot believe how fast October passed! Today all I could think about is how much x-mas shopping I still have to do, school work until finals, our 18th b-day approaching, and of course the baby will be here to in a few weeks! I am excited and stressing at the same time ūüôā Speaking of x-mas shopping, I cannot wait until BLACK FRIDAY! Do you guys like shopping on that day? I do not know what it is, but something about waking up at the but crack of dawn and running like crazy to catch all of the great sales… just gives me a high!

Breakfast this morning was P-R-O-T-E-I-N Oats!

  • 1/2 cup old-fashioned oats
  • 1/2 cup almond milk, 2/3 cup water
  • 1 tsp. chia
  • 1 tsp. flax
  • 1 tbsp. shakeology
  • 1 tbsp. caramel toffee fudge whey protein
  • 2-3 drops vanilla stevia
  • 2/3 drops maple extract

Top with

  • egg puff(2 egg whites)
  • dollop Jiffy All Natural pb
  • Kashi Go-Lean Crunch- Honey Almond Flax
  • 1 dried fig chopped up

After breakfast digested then it was time to do some boot camp: This is one of Fitnessista’s workouts from this month!

-Warm up 5 min cardio of choice (Whit and I did the warm-up from Insanity)

Superset 1: Bicep curl and tricep dip (15 of each, repeat 3 times)

Superset 2: Step-ups on the right (10), on the left (10), sumo squat and crunch (10), left (10)‚Äď repeat 2 times

Cardio blast: 5 min. Start at an easy jog or walking pace with 5-6% incline. Add 1% incline every minute until you have reached 5 min (if you need to take it down before then, do it)

Superset 3: Pushups (12- start in full plank and drop to your knees to finish if you need to), bent-over wide row (15)- repeat 3 times

Superset 4: Stability ball back extension (12-15) and Stability ball crunch (hold a weight at the ends with both hands,keeping your arms close to your ears to make it more challenging- 15)- repeat 3 times

Cardio blast: 5 min sprints. Go for 1 min at an easy pace, 30 seconds at a very challenging pace, alternating for 5 minutes total.

Bent over fly and dumbbell front raise (15 of each)- repeat 3 times

-Cool down (5 minutes), stretch.

This whole work out took about an hour and Whit and I were drenched! I never got bored the whole work out. This was a good work out to confuse the muscles ūüôā

 

Lunch was a GIANT salad and Pumpkin Apple Sauce Mess:

  • Romaine/ Spinach
  • Cucumber
  • Bell pepper
  • Carrots
  • Red Onion
  • Lentils
  • Quinoa
  • Mushrooms
  • Spike
  • Hummus
  • Italian dressing

Who ever said salads are gross…. obviously does not know how to make one like this! ūüėČ

Unsweetened apple sauce, pumpkin, raisins, kashi, graham cracker, AB, and heated up! This one smelled like pumpkin pie…. so good.

The answer to our recipe call!

 Hey buddies!

We’ve missed you all ūüôā The past 2 weeks have been filled with:

  • Midterms(yuck!)
  • Writing lots of essay’s(double yuck)
  • School/work
  • Cleaning, cleaning…. and more CLEANING
  • Making 70+¬†cookie and pretzel candy melts(they are a lot harder than they look to make lol.)
  • And of course good food ūüėČ

So you are probably wondering why on earth are we making so many candy melts and cleaning like it is nobodies business? Well it is because the BABY SHOWER is this Saturday! I cannot believe it has finally arrived to this week. I remember starting to plan this whole party clear back in April. I had been dreading and anticipating this week. The dreadful part is having to get your house ready for 70 people, but the anticipated part of the whole thing is seeing all of my family from Utah! We almost never see each other unless it is Summer so it is going to be fun.   

This morning Whit and I cooked up an old friend… Quaker Instant Hot Cereal!

  • 1 pkt. Instant Apple Cranberry Almond Hot Cereal
  • 1/3 cup almond milk
  • 3-4 drops vanilla stevia
  • 1/2 nuked gala apple
  • cinnamon¬†

Toppings

  • Fiber One¬†Oats &¬†Apple Struesel Bar crumbled
  • Dollop Sprout’s Old Fashioned AB

And to drink was a C+W Special Pumpkin Spice Latte

In the mix:

  • 1/4 cup almond milk
  • 1/4 cup boiling hot water
  • 3/4 cup brewed coffee
  • 2 tbsp pumpkin puree
  • 1 scoop vanilla cappuccino mix
  • 5 drops maple extract
  • 1/2 tsp Sugar-free Vanilla Torani
  • 1/2 tsp sugar-free Pumpkin Torani
  • Pumpkin Pie Spice + Cinnamon

~Whip to top!

Lunch was a sammie with turkey, hummus, onions, american cheese, and spike. This was served alongside the new obsession: Harvest Fruit Salad.

Mixed greens, strawberries, butternut squash, dried cranberries, walnuts, cottage cheese, stawberry-balsalmic dressing.

In case you were wondering what Spike is. It is a seasoning that Whit and I add to salads, sandwiches, eggs, wraps, pasta, veggies, etc.  

Ingredients: Defattted nutrisoy granules, granular toasted onion, nutritional yeast, granular garlic, celery root granules, ground dill, horseradish granules, mustard powder, lemon peels, orange powder, parsley flakes, red bell peppers, green bell peppers, white cate pepper, rose hips powder, summer savory, mushroom powder, safflower, parsley powder, white onion powder, spinach powder, tomato powder, sweet hungarian paprika, ground celery seed, cayenne pepper, ground tumeric, ground cumin, ground ginger, ground corriander, ground fenugreek, ground cloves, cinnamon powder, plus a delightful herbal bouquet of the best greek oregano, french tarragon, french sweet basil, french marjoram, french rosemary and spanish thyme.

 

Todays workout consisted of 20 min. treadmill and 20 min. No More Trouble Zone video.

0-5 min.    6.0 mph   2 incline
5-7 min.    7.0 mph    0 incline
7-8 min.    8.0 mph    0 incline
8-10 min.  5.0 mph    4 incline
10-20 min. REPEAT

 

Dinner was a Whole Wheat or Bust Fall creation: Harvest Pumpkin Sauce served over spaghetti squash.

(This was the recipe we chose to make for our Fall Recipe Call)

Here is the recipe from the lovely lady herself:

Flawless Fall Pumpkin Pasta Sauce

Recipe: Makes 2 servings

~10 pecans, chopped

1/3 cup chopped sweet onion

1/2 tbsp real butter

3/4 cup pumpkin

pinch pumpkin pie spice

pinch chili pepper

1/4 cup half and half

1/4 cup milk

1/4 to 1/2 tsp salt (I like 1/2 tsp, but I love salt)

The steps ‚Äď

1. Chop the pecans and separate it into two piles. Crush one pile so that they are tiny pieces.

2. Put a pan on medium heat and melt the butter.  Saute the chopped onions and pecans until the onions are deliciously caramelized.

3. If there is no butter left, add a little more. Add in the spices and pumpkin and stir. Cook the pumpkin for a couple minutes until it is more thick and fragrant.

4. Reduce the heat to low. Add in the half and half and milk and stir. Add in 1/4 tsp salt, stir, taste, and then another 1/4 tsp if you wish.

5. Once it has heated through and is nice and thick, it’s done! Rejoice!

A visit from the Nut butter fairy

Ello Mates!

     This mornings fabulous breakfast was something similar to this Lemon Chiffon Baked Oats from months ago which is also on our updated recipe page if you guys have not visited it in a while.

Baked Lemon Ginger Oats

Serves 2:

  • 1 cup of Old Fashioned Oats
  • 1 mashed banana
  • 1 cup water
  • 1 tsp chia seeds
  • 1 tsp flax seeds
  • squirt of lemon juice
  • 1/2 container of Lemon yogurt (3oz)
  • Sprinkle of coconut
  • Grated Crystallized Ginger
  • Silvered almonds

-Crust-

  • 2 gingersnaps
  • 1/4 cup of Fiberone Cereal
  • 2 tbs¬†Cinnamon Sweeties Cereal
 

Cook in the oven at 375 degrees for 20-25 min

  • Preheat¬†the oven to 375, In a large mixing bowl, mix oats, water, mushed banana, lemon, chia, flax, and yogurt
  • Spray a small (8‚Ä≥ by 8‚Ä≥) pan with non-stick spray. Layer the bottom with Smashed gingersnaps and cereal
  • Pour all of the¬†oat mixture over the mashed gingersnap cereal crust.
  • Top with Silvered almonds, coconut, and grated Crystallized Ginger
  • ¬†

     Todays snack for school featured yet again some of our much loved LUNA bars! Todays flava was Vanilla Almond.

    ¬†Can you see my little Leaf necklace? Isn’t it adorable! lol

    When Court and I finally made it home from school, there was a HUGE amazing package waiting on the porch for us! Can you say Christmas in September? lol This generous package was from the lovely people over at Artisana.

    Check out the loot. It is seriously a girl’s Nut butter Mekka. OMG ūüôā

     The beauties well surely be put to good use.

    ¬†We each got to pick a Nut Butter flavor, and here were the picks for our BIG jars. I was dying for the Macadamia butter after seeing it on Gracie’s blog, and Court just had to have her classic coconut Butter.

     Shall we check out the stats?

    ¬†So far we’re thinking about using this one¬†as a good German Chocolate Oat combo. Any good ideas?

    Maybe we will have to head over to Chocolate Covered Katie’s. After all, she is the Chocolate and Artisana butter¬†Queen!¬†

     I really wish Macadamia nuts were not so expensive, because anything with Macadamia Nuts is fabulous. Okay, now I am craving a White chocolate macadamia nut cookie. Oh and I just got a genius Oat Creation idea.

    ¬†Macadamia Butter Verdict: Fantastic aroma and consistency the moment that you open the jar. Court and I were so tempted, that the first lick was simple straight finger dipping. Oh, and the Apple Macadamia butter combo was perfect ūüôā

    ¬†After lunch we completed Level 1 of shredding it with weights, and then had some good ol’ homework time, which is never fun! There was Psychology terms, reading the Great Gatsby, and studying for Pre-calc. My brain is officially fried. lol

     With a Pumpkin and sweet tooth craving tonight, Court whipped us up some delish Pumpkin pancakes

    Twas a good night. Tomorrow is a work day from 7-1, then off to art at 6. Have a fun night guys!
