Pancakes make sunday’s so much better!

Lately we have not had to be to work until 8 AM, meaning we get an extra glorious hour of sleep! Omg, seriously summer you are so close but yet still so far away. When your little, you never understand why your older siblings would sleep for so many hours in the day, but when you finally reach those years yourself, you absolutely love love love sleep. While at Target the other day, I spotted this shimmering box of Pumpkin Pancake mix. WHAT! And it was on sale for $3.

 We used this mix as a basis, then added our own creation, instead of following the boring per usual route on the back. What we did was:

Serves 1:

  • 1/2 cup of Pancake mix
  • 2 Tablespoons of unsweetened applesauce
  • 1/2 Tablespoon of Wheat Germ
  • 3 Tablespoons of unsweetened Almond milk
  • 1/4 cup of water, or to pancake like consistency
  • Lots of cinnamon
  • 1 Tablespoon of silvered almonds

*Makes about 4 small/medium size pancakes

 Then, each one was topped differently, but all with nuked cinnamon agave apple chunks. They were topped as follows:

  1. Skippy All Natural Chunky PB, and Pumpkin Butter
  2. Dark Chocolate PB and trail mix
  3. Honey Greek yogurt and granola
  4. sugar-free syrup

 The perfect cozy Sunday morning breakfast eaten in PJ’s, robes, and Slippers 🙂

After breakfast, we got ready then had a nice drive to work in Colorado’s beautiful Sunshine morning. Today was a heat wave, temps got up to the 70’s! Just like any other Sunday, this one was hectic as HE**. I kept thinking come on people, get outside and have a picnic, why on earth would you want a hot bagel on such a nice day? I know if I wasn’t working, Court and I would defintely go on a walk to the park, swing on the swing, and talk like we do all the time in the summer~ 

Now, Courtney and I are not really Chip girls, but after seeing Pirates Booty chips everywhere on the Internet and in local health food stores, we got some of our own to try. And this was the cute little treasure chest they sent us.  

 It was filled with a variety of single serving bags.

The flavors we got sent were:

  • Aged White Cheddar
  • Sour Cream & Onion
  • Veggie
  • New York Pizza
  • Sea Salt & Vinegar

 

 

 

  We were not in much of the lunch packing mood last night, so we just threw together a healthy fun lunch this morning before work. We each had a Garlic Chicken White pizza Lean Pocket, split a bag of sour cream & Onion Pirate Booty chips, and a clementine.

Verdict: These things are awesome! Little puffs of flavor, and only 130 cals per bag. I was expecting them to be big chips, but they were actually little tiny air puffs. And there is so many in a bag, that it is way more filling than fattening chips. They tasted like Lay’s Sour Cream and Onion, but instead you get a baked healthier, more filling version!

 After work, Cravings for a yogurt mess like yesterdays kicked into high gear. So we made one using another Kardea bar.

 In the mix:

  • 1 container of Strawberry White Chocolate yogurt
  • granola
  • 2 animal crackers
  • kashi go lean
  • 1/2 of Kardea Cranberry Almond Bar

 Todays Flavor was Cranberry Almond.

 

 Verdict: These are so good heated up for about 15 sec in the microwave, because they melt slightly, and mix in the yogurt well since they are so soft. I liked the cranberry flavor, but so far Chai is still the best.

 Our older sister Karstee likes to cook Sunday’s, since she has the weekends off from work, so she made PF Chang’s inspired Chicken Lettuce Wraps.

  • 3 tablespoons oil
  • 2 boneless skinless chicken breast
  • 1 cup of water chestnuts
  • 3 tablespoons chopped onions
  • 1 teaspoon of minced garlic
  • 4/5 Romaine lettuce leaves

Sauce:

  • 2 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon rice wine vinegar
  1. Bring oil to medium heat in a large frying pan
  2. Saute Chicken breast for 4-5 min till done
  3. Remove Chicken from pan and cool
  4. Keep oil in pan, and remain hot
  5. Mince water chestnuts into pea size
  6. Prep sauce in a mixing bowl
  7. When chicken cools, cut into very small chunks
  8. With pan still on high heat, add another tablespoon of oil
  9. Add chicken, onions, garlic, and water chestnuts to pan
  10. Add sauce to pan, and saute for a few minutes
  11. Serve in Lettuce “Cups”

 Served alongside were Sesame green beans from “The Silver Spoon” cookbook,  carrots with Garlic humus, and a Pomade.

 

 

 That brownie was so effin good last night from Lenny&Larry’s, so we were uber excited to dig into the Peanut butter Cookies.

 Verdict: Wow, this company sure knows how to make a mean cookie! And brownies 🙂 In general, they turn the unhealthy into nutrition filled.

It was taken out of the package, and promptly placed on a paper towel to be microwaved for 45 sec. Baked packaged goods, just simply taste right out of the oven when you heat them up, it is crazy. Snowy and relaxing

 Yesterday while I was out shopping, I picked up a few goodies, including gingerale, so we could have pomades with dinner, and other things to make some treats for fellow bloggies. Our mom made some Ham fried rice, and we had a light fluffy roll, and carrots w/ humus to pair.

 

This was a delicious drink, and I have been wanting to see it, ever since visiting Kath’s blog.

 

Since this morning is Wednesday,  we got to sleep in till 5:30 because school starts later. When we first looked out the window it was barely snowing, but then when we were done with breakfast we looked out again to a white blowing storm. Our whole car and street is covered. And quite honestly, our little car will not make it to school. So today we are going to stay home and relax as well as get some stuff done.

Breakfast was another French Meadow Cinnamon Raisin BAGEL. On one side is skippy crunchy PB and pumpkin butter, and on the other side is honey almond cream cheese.

Paired was a yogurt Parfait, and some toffee coffee.

On top was another one of the granola’s sent to us by Bakery on Main. This flavor is Apple Raisin Walnut.

Verdict: Love love the dried apples in the mix. Perfect paired with tropical fruit.

Coffee:

  • 1/2 cup of almond milk
  • 1/4 cup of hot water
  • 1/2 cup of hazelnut coffee
  • 3 drops of stevia
  • 1 pkt stevia
  • 1 tsp of cappuccino mix

And the lunch that was packed today, but will now be eaten at home is a kitchen sink salad with half of a pink lady apple, and a “trail mix.”(Dried cranberries, dried pineapple, nuts, teddy grahams, and somersaults.) The dried pineapple came from one of the many packs that were sent to us. And I love the No added sugar part. Review is to come later.

Friday 3/26

This morning Whit and I hopped right out of bed with out even complaining(very hard to do sometimes). We were determined to get through this last day without one negative comment. To start off our day, we decided to have a bowl of oats kind inspired by Kath Eats from yesterday.

I made Whit and I pumpkin spice latte’s, while she prepped our oats 🙂 This was definitely not what you call a skinny latte, but hey it is Friday and everybody should indulge and treat their selves something every once in a while, right! 

This morning’s bowl of pumpkin oats are as follows:

  • 1/2 cup oats, soy milk, water
  • 2 tbs. of pumpkin puree
  • pinch of sea salt
  • 1 tsp of cinnamon
  • 1/2 tsp. pumpkin pie spice
  • 1/2 tbs. of chia seeds

Toppings were:

– a split pink lady apple chopped and heated
-10 butterscotch chips(the best part!)
– a heaping spoonful of greek yogurt, white choc. pb loco

On the way to school, we listened to a real song to put us in a real upper mood. And that was no one other than Miley Cyrus. We rocked out to her song Party in the USA. That song is awesome! Every car that passed us was probably thinking what are those girls doing. lol, oh well we were having a hay day!

Well school ended up flying by. It is weird, but somehow not thinking about all of the negative things actually made time fly. You should try it sometime. For lunch we ended up finally eating our morningstar chicken nuggets that have been in the freezer forever, with some Annies macaroni and Pineapple. The red sauce pictured is some really yummy buffalo sauce, that is great for dipping those nuggets.

 Look what came for mail delivery today, first up Whooha Gear workout shirts! They are super cute, and we each got to pick out personally which one’s we wanted. Review to come.

Next up, Fabulous Flats. Nicole Spinner sent us Flatbread, sandwich thins, and Pizza crust, omg can you say carb heaven?

To make use of these on a Friday night, we wanted  to first try out the pizza crusts.

 We made an Alfredo Pizza:

  • Multi-grain Pizza Crust
  • Newman’s Own Alfredo Sauce
  • Parmesan
  • Spinach
  • Next Generation Organic mozzarella
  • Shredded lean Chicken Breast
  • Minced Garlic
  • EVOO (for crust)
  • Garlic Powder (For Crust)

* Cook at 400 degrees for 20 min.

This pizza was by far one of the best pizza’s, our whole entire family has every tried. The dough was so soft, light, and fluffy. Just the way it should be. We loved the texture, and this was the perfect combo with the Next Generation cheese. Our older sister’s were raving about how good these pizza’s were, and want us to make some more soon.

Next up was the Buffalo Wing Pizza:

  • 1 Pizza Crust
  • Light Bleu Cheese Dressing (light layer)
  • A drizzle of ranch
  • 1/4 cup of chopped white onions
  • Shredded chicken Soaked in Chick-fil-a Buffalo Sauce
  • 2 Next Generation Organic mozzarella Shredded on top

*400 degrees, for 20 min.

 Verdict: Both pizza’s were a hit, and our older sister Ashley and dad liked this one the most, because it was more spicy.

 Whit and I had a slice of each paired with a veggie Salad.

 Then, today we finally picked up Millet Bread. We’ve been wanting to try this stuff 4 Eva, ever since seeing it on the fitnessista, and Live Laugh Eat’s Blog. Allie was right though, it really does have a pound cake texture.

 We used our first slice ever, to make a carrot cake.

 Topped with:

  • Cinnamon
  • Raisins
  • Walnuts
  • Coconut
  • Pineapple
  • Shredded Carrots
  • Honey Greek yogurt mixed with Coconut butter (icing)

 

Fun Fact Friday: Whitney and I are mirrored twins. I write with my left, and she writes with her right. Our whole life, something on our body that is really similar is mirrored. It is really weird!

Time for bed, work is bright and early tomorrow, yikes!
