One hot mess! YIKES

Hey lovelies ūüôā

Lately it has been hotter than blazes in our house so last night Whit and I needed something cold to cool us off. We thought to create a frozen treat with nothing other than Shakeology. This stuff rocks! If you skimped on veggies or greens during the day, then ya better drink up!
We call this Shakeology creation…
 Chocolate Mint Protein Ice Cream!

  • 1/2 cup almond milk
  • 1/2 cup water
  • 1 scoop choc. Shakeology
  • 1 tsp. instant coffee granules
  • 1/2 tbs. carob chips
  • 3 drops mint extract
  • sprinkle guar and xanthum gum
  • ice

Freeze for an hour and ENJOY!


This morning Whit and I were craving PANCAKES, protein pancakes that is! They are so yummy, satisfying and they kind of have a french toast texture. They never fail to impress me ūüôā Today we decided on raspberry, carob chip, coconut ones. The inspiration for these came from the ammazzing Pinkberry¬†I had last month.

1. Start by pouring 1/2 cup of old-fashioned oats into a bowl.


2. Then add 3/4 cup of egg whites.


3. Next add 1 sweetener packet of your choice.


4. Then add 2/3 cup of raspberries!


5. 1/2 TBS. carob chips


6. 1 TBS unsweetened coconut


7. A little under 1/3 cup unsweetened apple sauce


8. Stir all of the ingredients together.

Then measure our 1/4 cup and pour into a skillet. When the edges start to bubble then flip the pancake ūüėõ

This recipe should make 5-6 pancakes. ENJOY!

Paired with some iced Lipton Caramel Tea and this is a meal fit for a queen! lol.

We topped ours with some yogurt and a little brown rice syrup.


Well guys today it hit 100 degrees! So our mom FINALLY let us turn on the air conditioning in the house for the first time this Summer. Hallelujah! I swear I looked like a hot sweaty mess today. 

Our afternoon consisted of some 15 HITT action with the sistas, this odd lunch pair that I have been craving, and oh yeah some retail therapy!  

I swear Lean Pockets keep coming out with better and better flavors!

 Who says you cannot have a sweet potato with a Lean Pocket? In my world lunches like this always exist! lol.


I fueled myself with this cinna-puffin¬†yogurt mess before leaving to SHOP! Let me tell ya’ on a hot day like today nothing feels better than shopping in a nice air-conditioned store. And plus you can get in some good cardio too! ūüėČ


I was cravin’ something spicy for dinner tonight so I used some jalapeno hummus and made a grilled turkey wrap.

 Look at those awesome grill marks. This girl knows her stuff, huh!

Tomorrow is back to boring work. YUCK! But at least we do not have to close ūüôā All of your questions for our next vlog have gotten the creative juices flowing, so keep the questions coming!


Monday’s are like a mountain

¬†Good morning! School is back in session, and we got about 7 weeks to go till Summer. Let the countdowns begin=) This morning’s breakfast was prepped in our handy easy lunchboxes the night before. Overnight Oats, with toppings in the side compartments. Man what a time saver.

 This was truly a bowl of Tropical Sunshine Over-night Oats, In the mix:

  • 1 pkg of Coach’s Oats
  • 1/4 cup of Pineapple coconut yogurt
  • 1/4 cup of Pomegranate Kefir
  • 1/4 cup of Honey Greek yogurt
  • 1 tsp chia
  • 1 tsp flax
  • 1 tsp wheat germ


  • Strawberries, Kiwi, Mango
  • Unsweetened coconut
  • Cranberry Trail mix
  • Kashi go lean cereal
  • Silvered Almonds


 It was Luscious!

Since today is a “B” day at school, we packed Vanilla Almond Luna Bars for a snack during 3rd period.

We have 4 of these handy dandy containers life savers, so we also packed our lunch too;)

In the Lunchbox:

  • Egg White Salad Sandwich on Sandwich thin(Used a melted laughing cow¬†wedge instead of Mayo)
  • Baby Carrots with Humus
  • Lime CheeCha Puffs


On the Agenda today:

  1. Get through School
  2. Finish Workout (Fit Test, and Max Interval circuit…Yikes!)
  3. Make Din-Din
  4. Clean room (it is a disaster)
  5. Do HW if any? So far none
  6. Blog
  7. Sleep=)

Sometimes Monday’s can feel like a mountain, but we will make it through this week!

The other day Whit and I received a ginormous care pack of POM Wonderful to review(thanks Kristen). In the past few months I have seen so many fellow bloggers experiment with POM for a variety of recipes. Whit and I wanted to experiment ourselves, so we decided on POM Pancakes!


First off, here are some cool facts about POM:

Now back to our pancake creation… we mixed these three simple ingredients together and made two decent size pancakes for each of us.

Before Whit and I threw some POM into our pancake mix, we had give it a taste test.
Taste Test Verdict: One word, INCREDIBLE.¬†It tasted like¬†cranberry/grape juice, but without that sugary after taste that¬†makes your teeth feel like they are rotting. Plus with no added sugar, and 160 calories a bottle, it¬†was guilt free… just¬†pure bliss¬†ūüėõ¬†

When they were all cooked up we topped them with a greek yogurt/coconut butter/ sugar free syrup mixture and of course bananas! 

POM Pancake Verdict: Like it says on the bottle wonderful. The juice made these pancakes so moist and fluffy! With the coconut mixed in, it tasted really tropical. 

Whit and I¬†got¬†our break last again at work(what’s new right), so we had a really late lunch. We were both starving! Lunch today was a mixed greens salad with shredded chicken, quinoa, lentils, red bell peppers, and greek feta dressing. It was also topped with some sea salt chee cha puffs crumbled. I do not know if it was just because I was so hungry or what, but this salad never tasted so good.

Whit and I got off work at 3:30, then we had to sit in traffic so it took about an hour to get home. Monkey Brains sent us this lovely package yesterday. It consisted of:

  • Raspberry, Blueberry and Strawberry Monkey Brains Oatmeal
  • Banana Peanut Butter Chocolate, Blueberry Vanilla and Strawberry Vanilla Monkey Bars

Yet again we were starving when we got home, so we decided the banana peanut butter chocolate bar sounded good to have for a snack.

VERDICT: It tastes like banana chips(which I adore) dipped in chocolate. The bottom layer of chocolate makes it tastes like a candy bar. At only 140 calories this is your go to snack.

¬†When we were done with our snack, we literally crashed until dinner. I was in such a deep sleep that I almost did not wake up for dinner… no good ūüė¶ Dinner tonight was delish. It was Karstee’s night to cook so she used up some old stuff in the pantry and made Spagetti. Who doesn’t love carbs? lol.

Well after a long day, Whit and I wanted to treat ourselves to a good but healthy dessert. Here are some bars that we made from a recipe that Tina made at www.carrotsncake.com Enjoy! 



Blueberry Coconut Bars

Makes 12


  • 1/2 cup coconut flour
  • 1/2 cup old-fashioned oats
  • 1/4 cup ground flaxseed meal
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup brown sugar, packed
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 cup frozen blueberries
  • 1/2 cup canola oil
  • 1/2 vanilla soy milk


  • Preheat oven to 350*F
  • Combine all ingredients in a large mixing bowl
  • Coat 8 x 8 baking pan with non-stick spray and pour in batter; smooth with spatula
  • Bake for 40-45 minutes until cooked through
  • Although to cool before cutting
  • Enjoy!
