A visit from the Nut butter fairy

Ello Mates!

     This mornings fabulous breakfast was something similar to this Lemon Chiffon Baked Oats from months ago which is also on our updated recipe page if you guys have not visited it in a while.

Baked Lemon Ginger Oats

Serves 2:

  • 1 cup of Old Fashioned Oats
  • 1 mashed banana
  • 1 cup water
  • 1 tsp chia seeds
  • 1 tsp flax seeds
  • squirt of lemon juice
  • 1/2 container of Lemon yogurt (3oz)
  • Sprinkle of coconut
  • Grated Crystallized Ginger
  • Silvered almonds

-Crust-

  • 2 gingersnaps
  • 1/4 cup of Fiberone Cereal
  • 2 tbs Cinnamon Sweeties Cereal
 

Cook in the oven at 375 degrees for 20-25 min

  • Preheat the oven to 375, In a large mixing bowl, mix oats, water, mushed banana, lemon, chia, flax, and yogurt
  • Spray a small (8″ by 8″) pan with non-stick spray. Layer the bottom with Smashed gingersnaps and cereal
  • Pour all of the oat mixture over the mashed gingersnap cereal crust.
  • Top with Silvered almonds, coconut, and grated Crystallized Ginger
  •

     Todays snack for school featured yet again some of our much loved LUNA bars! Todays flava was Vanilla Almond.

     Can you see my little Leaf necklace? Isn’t it adorable! lol

    When Court and I finally made it home from school, there was a HUGE amazing package waiting on the porch for us! Can you say Christmas in September? lol This generous package was from the lovely people over at Artisana.

    Check out the loot. It is seriously a girl’s Nut butter Mekka. OMG 🙂

     The beauties well surely be put to good use.

     We each got to pick a Nut Butter flavor, and here were the picks for our BIG jars. I was dying for the Macadamia butter after seeing it on Gracie’s blog, and Court just had to have her classic coconut Butter.

     Shall we check out the stats?

     So far we’re thinking about using this one as a good German Chocolate Oat combo. Any good ideas?

    Maybe we will have to head over to Chocolate Covered Katie’s. After all, she is the Chocolate and Artisana butter Queen! 

     I really wish Macadamia nuts were not so expensive, because anything with Macadamia Nuts is fabulous. Okay, now I am craving a White chocolate macadamia nut cookie. Oh and I just got a genius Oat Creation idea.

     Lunch consisted of a Turkey and Cheddar melt with an apple drizzled with Macadamia Butter.

     Grilled is Mandatory of course 🙂

     Macadamia Butter Verdict: Fantastic aroma and consistency the moment that you open the jar. Court and I were so tempted, that the first lick was simple straight finger dipping. Oh, and the Apple Macadamia butter combo was perfect 🙂

     After lunch we completed Level 1 of shredding it with weights, and then had some good ol’ homework time, which is never fun! There was Psychology terms, reading the Great Gatsby, and studying for Pre-calc. My brain is officially fried. lol

     With a Pumpkin and sweet tooth craving tonight, Court whipped us up some delish Pumpkin pancakes

    Twas a good night. Tomorrow is a work day from 7-1, then off to art at 6. Have a fun night guys!

    Goal for the week: “NO Stress”

     On the menu: Espresso Chocolate Chip Muffins: Created by this lovely lady.

    Espresso Chocolate Chip Muffins
     
    1 cup buttermilk
    1/3 cup canola oil
    2 large eggs (beaten)
    (or 2 Tbsp instant coffee)
    1/4 tsp salt
     
    Directions:
    1. Preheat oven to 385F
    2. In a bowl, beat together eggs, sugar, milk, oil, and espresso
    3. In a separate bowl, blend flour, powder/soda, and salt
    4. Gently pour wet ingredients into dry
    5. Fold together, remembering not to over mix
    6. Before last few stirs, fold in your chocolate chips
    7. Scoop + over flow batter into muffin tins
    8. Place in oven and reduce temperature to 360F
    9. Bake for 30-35 minutes
    10. Remove and let cool 
    Instead of making 9 like Kelsey did, we made 12! 🙂

     Holey Canoli, this girl can bake! Everyone loved them, and they made the perfect breakfast.

     Make them, if you have not yet. We highly recommend this recipe. And if you want an even bigger muffin, there is always the option to make 9 like her.

     And for Jessica’s Luna Movement we did a little Luna lovin’ for snack time at school. teehehe! Blueberry bliss is like a struesel topped blueberry muffin.

    Court wanted the same flava… 

     And the happy girls were off to school!

    We were busy bees in every class, and wouldn’t ya know, TIME FLEW BY! Before we knew it, we were at home watching America’s Next Top Model while making Lunch.

    On the menu:

    • Pear Butternut Squash Salad
    • Spinach Mushroom Lean pocket

     In the mix:

    • romaine
    • butternut squash
    • pear
    • cinnamon
    • raisins
    • goji berries
    • walnuts
    • flax seeds
    • annies raspberry vinaigrette

     

    And to round off this evening all of us girls went and got registered for Race for the Cure. Dinner involved a little savory and sweet. An egg sammie, and sweet tatar did the trick! 

     Have a great night ladies and gents. I don’t know about you, but I gotta go hurry up and finish my math HW, before 90210 comes on. And then Court and I are having a Dawson’s Creek marathon. Here’s to a less stress week! Who’s with me? lol

     Hey Guys! This has been the best most stress-free week of school ever so far 🙂

    I really hope all of you guys are having a great week too! How is school, managing workout, eating healthy, staying organized, etc going? We are managing pretty well, but I really think it all has to do with having every other day of school off. And this week we just have school tomorrow, work on Thursday, as well as our Art Class Thursday night, and then we are done for the week. Friday is a FREE day at home, Saturday we have work from 8-4, and then Sunday off. Not bad at all right? Oh, and I finally figured out that not matter what every weekend is a 3 day weekend for Court and I. Pretty Cool 🙂

    As far as working out goes, the other day we were surfing on the fitness section of OnDemand workouts, and came across Rock Hard Body by Jake. This workout is an awesome total body sculptor. It is 45 minutes of pure cardio and strength training. And the trainer Steve Maresca is awesome! They use medicine balls, but instead Court and I used a 8lb dumbbell. You guys should try out this workout and let us know how you like it, because it was probably equally as hard as Insanity as far a sweating and breathing heavy go. lol
     
     After seeing Gracie’s Sweet Potato Pie Oatmeal a few weeks ago, Court and I just had to recreate it! And so last Friday that is just what we did 🙂 I wanted this voluminous delish bowl of oats to never end. lol. 

     

    Sweet Potato Pie Oats

    In the mix:

    • 1/2 cup oats
    • 1/2 cup almond milk
    • 1/2 cup water
    • 1/2 cooked and mashed sweet potato
    • 1/2 tsp chia seeds
    • cinnamon
    • vanilla extract+maple extract
    • stevia

    Toppings

    • Marshmallow Fluff
    • Vanilla Yogurt
    • Cinnamon
    • Optional-Crushed nuts

     Decadent Heaven

     Breakfast for lunch has also been a yummy option lately. And I cannot get enough of Juicy Nectarines.

     When you are sick of bars for a snack, and there is nothing else to turn to Yogurt messes never fail.

     Caribbean Shrimp with Brown rice

    In the mix:

    • 1/2 cup cooked brown rice
    • veggies
    • Spike seasoned tofu
    • Caribbean seasoned shrimp

    Sunday morning Court, Ash, and I had breakfast at the kitchen table all together which was totally not normal. We all looked at the ads, and just talked. It was nice 🙂 Court and I enjoyed Strawberry oatgurt with pumpkin spice coffee, and Ash made an Elvis Sandwich.(She is so addicted to PB&Banana now!!! LOL, too funny) 

    Every Sunday our family fills out Football picks, everyone puts in a dollar, and the person who gets the most points from all their teams winning gets all $5. It is kinda like Fantasy football, which a husband, boyfriend, or brother of yours might do online. Anywho, we do them every week, and this week I beat my dad by 1 point, so I am a lucky girl who now how $5 extra dollars in my wallet! Cha-Ching$$

    The best combo ever is taking Cinnamon Date Manna bread, then heat it up, and top it off with PB&Pumpkin butter. Seriously it taste like a decadent dessert or Blondie.  

     With Molly’s suggestion to heat up apple sauce, we tried that when making this “Apple Sauce Mess” on the side of a smothered burrito.

     Pumped up Apple Cinnamon Overnight Oats

    In the mix:

    • 1/3 cup
    • 1/3 cup puffed millet
    • 1/2 tsp chia seeds
    • 1/2 tsp flax seeds
    • 1/3 cup unsweetened vanilla almond milk
    • 1 6 oz container of Light Apple Turnover Yogurt(Yoplait)
    • Lots of Cinnamon
    • Raisins
    • Chopped Apple Slices

    Toppings

    • PB
    • Kashi GoLean Crunch
    • Fiber One

     PB Banana&Honey Sammie

     Big ol’ Veggie salad w/ a Garlic White Chicken Lean Pocket

     Bratwurst with Butternut Squash

     More Yogurt messes, but this time for dessert…

    Since we did not have school today, Court and I woke up leisurely around 9, and watched some morning shows while whipping up some Maple Coffee Oats.  

    Lately the afternoons have been looking a little dreary and dark, so this Fall like day called for a Panini with Lentil Soup.  

     

    Who is excited for the Biggest Loser Premiere tonight? We are! And in honor we are cooking some Almond Crusted Chicken for dinner straight out of Jillian’s Cookbook. LOL 🙂 Have a great night guys! Relax with the ones you love♥ Oh and we posted the workout video below. DO IT!!!
