Lemon Ricotta Pancakes

No work today for these twins, just housework.

Good morning Everyone,

           How was your night of sleep? We slept great, and woke up around 8:45. There was a plan to make some Blueberry Coconut Kefir pancakes using our new coconut flour, but it resulted in a huge mess and a mission failure. So after much debate we turned to our Essentials of Healthful Cooking cookbook. (you can find it at william-sonoma).

Lemon Ricotta pancakes

Makes 4 servings (we halved the recipe)

  • 1 cup part-skim ricotta cheese
  • 1/4 cup 1 percent milk
  • 3 large eggs separated
  • 2 tablespoons granulated sugar
  • 1/3 cup all purpose flour
  • 1 tablespoon lemon zest
  • kosher salt
  • pinch of cream of tartar
  • 4 cups mixed berries
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon canola oil
  • 1/2 tablespoons confections sugar
  1. place the ricotta in a large bowl. Add the milk, egg yolks, and granulated sugar and whisk together until blended. Add the flour, lemon zest, and 1/4 teaspoon salt and, using a rubber spatula, fold until blended
  2. In a separate bowl, combine the egg whites and the cream of tartar and, using a whisk or handheld electric mixer set on medium speed, beat until soft peaks form. Using the rubber spatula, carefully fold the beaten whites into the ricotta mixture just until blended
  3. In a bowl combine the berries and lemon juice, set aside.
  4. On a large nonstick griddle or frying pan spray with nonstick spray or canola oil
  5. Spoon out about 1/3 cup of mixture for each pancake. Makes about 12.
  6. Top with confections sugar, and berry mixture.

    These look absolutely wonderful! I’ve never had ricotta but I’ve heard a lot of good stuff about it 😀 And I loooooove lemon 🙂
