Memorial Day Weekend Wrap Up!

 This weekend consisted of long hours of work, last-minute HW assignments, BBQ, Hot-tub, Buffalo Bill’s grave, and just simply relaxation. What a 5 day break it has been. And now we are ready to finish the last week strong.  Week 9 we have arrived! Some random eats of the weekend (mostly breakfast pictured) include: 

 

Saturday Breakfast: Pumpkin protein pancakes and some Milk

Saturday night we had our Big BBQ with everyone, and Court and I made Goat Cheese Turkey burgers, Alexia fries, and some Almond cookies out of Eat Drink Be Vegan for Dessert. The turkey burgers were amazing, and a total hit. And the cookies turned out like little round balls, so everyone kept joking calling them a hairball. LOL

Sunday Breakfast: Goji Carob Chip breakfast cookie

Sunday Dinner: Egg white omelet and Apple cinnamon toast(mmm… wow this one was good, and the idea came from the fitnessista)

We finally mastered the flip of the omelet. Anybody else have troubles?

Sunday Dessert: Goodtimes Strawberry Cheesecake Spoonbender (Totally worth the indulge)

This morning Breakfast: protein Maple Pancakes and a homemade Bolthouse frapp

 

C+W’s Homemade Bolthouse Mocha Frappaccinio

Ingredients

  • Bolthouse Mocha cappuccino Juice
  • Greek Yogurt
  • Ice

Directions:

  1. Fill your glass of choice 3/4 the way full of ice
  2. Pour in bolthouse juice till it barely covers the top of all of the ice
  3. Add about two spoonfuls of greek yogurt
  4. Blend on the FRAPP button for about 20-30 sec
  5. Enjoy! Tip- If you need extra flavor add in a teaspoon of cocoa powder

 Today everyone was off work with Court and I, so all of us sisters decided to go to St. Mary’s Glacier. This was the longest trip up the mountain, and when we were half-way up, we realized that we were about to run out of GAS!!! And, none of us were wearing warm enough clothes, so we just saw the glacier from the car and had to turn around. On the way down we saw a rock painted like a pig, so we got out and took a pic. (lol the highlight of the day). After we got some gas, we still wanted to do something since we were in the mountains. So we went to Buffalo Bills Grave on top of Lookout Mtn. Verdict-Not so great. But all in all we had a good scenery drive in the mountains today.

Now, we finish up our last week being Juniors, go to work this weekend, and then next monday we head to Yellowstone for some White water rafting. YAY! We are so physced.

    i still yet have to make to perfect omelet. they ALWAYS fold on me whenever i try to flip them 😦 got any tips?

    Oh my gosh the breakfast cookie! That’s so cool. You guys sure love pancakes, huh? Two days in a row 😉
