So this weekend was not a big extravaganza, but it was a good weekend you know. Work was not too shabby, esp. today, because we got to go home early 🙂 Thank you boss man! Yeah we could have stayed and earned extra money$, but we close every weekend, and just going home sounded so much better.
Saturday’s breakfast was blueberry Pie Oatmeal With some blueberry tea!
A blueberry vitatop was crumbled on top with coconut, and brazilian nuts, YUM!
Lunch involved some more blueberry and coconut:
Blueberry Coconut Prana Bar
Toasted Coconut vanilla yogurt
Half of Cinnamon Pink Lady apple
When we got home from work, we had a snack on our millet bread:
1 slice millet
half a banana
Then, all of us girls decided to do a Chalene Extreme workout. We did Burn Circuit 3, which lasted for about a half hour, and consisted of some hardcore weight lifting/strength training. I ♥ Chalene, and she wears the most cute blinged out Workout outfits!
After our workout, Court and I had some of this High Country Kombucha Tea.
**Verdict: Taste like Gt’s Kombucha, but compared to it there is less sugar which is a Plus + in our book. And the Goji berry flavor was delish.
Then, for din din we made Veggie burgers and Sweet potato fries that had Cinnamon and maple on top(THE BEST, OMG)
**Verdict: We love to use a Zero calorie Sugar replacement when baking, and so far NuNatural products have been awesome for doing that. 😉
Low Carb Sweet Bread
Makes 1 loaf (8 slices)
Each slice 107 calories, 2.5 grams of carbs, and 7.5 grams of protein
For the higher protein version, each slice is 85 calories, 2.5 carbs, and 14 grams of protein
- 1 cup ground flaxseed
- 1 cup wheat-bran
- 1/4-1/2 cup pure pumpkin (depending how moist you like your bread- I like mine really moist so I used 1/2 cup) **we used a half**
- 1 cup liquid egg substitute
- 1/2 cup hot water
- 1 tbsp each baking powder and cinnamon
- 2 tsp pure stevia extract
- Preheat oven to 375 degrees. Spray a loaf pan with nonstick baking spray.
- Combine all ingredients.
- Pour into baking pan, bake for about 30 minutes or until a toothpick inserted into the center comes out clean.
**For a higher protein version, use 1 cup of soy protein powder instead of flaxseed. You will need to bake this version about 45 minutes, or until a toothpick comes out clean.
The bread was a hit with Court, Ash, and Me, but our mom and dad thought it was a bit too sweet. Well, you win some, and you lose some. We personally thought the bread was delicious, and perfectly sweet. And to pair with it was 2 scoops of Dreyer’s Cookie Dough Ice-cream, and a scoop of Truwhip.

This morning we began our 6 AM wake-up call with a green monster using a customized Vanilla Dream protein You Shake. This was one of the many flavors they sent us awhile back.
1/2 pkt of customized Vanilla dream protein powder
1/2 tbs chia seeds
1 cup unsweetened almond milk
1 tbs naturally more peanut butter
1 frozen banana
Lots of spinach
2 ice cubes
**Verdict: This Green monster was the best one we have ever made, and I honestly think it was this protein powder. The Vanilla flavor is so strong, and really makes the biggest difference. Kinda like a vanilla Milkshake 🙂

There was a lot of leftover ham in the fridge, so my mom decided to make us Ham Fried Rice for Dinner. And to pair we added a pink lady topped with pumpkin, PB, and cinnamon.
Tomorrow starts Week 4 of school! We are so close to summer 🙂 And this week is going to be 3 “A” days, and 2 “B” days, so it will be nice to only have 2 long days of school. Right now we’re having a Hills marathon on MTV, and guess what the new season starts Tuesday! Yay, we are Hills junkies. lol Cheers, Here is to a GOOD week!
