Meatless Monday

 Have you heard the phrase keep your friends close, and your enemy’s closer? Well that is pretty much what today’s lesson learned had become. The start of spring break, has also brought 4 days of work in a row. Blah! It was so hard with today being day 3 to even pry open our eyes this morning, so coffee came to the rescue.

 We had Pumpkin french toast on Apple Cinnamon Bread, with White chocolate PB, Pumpkin butter, and sugar-free syrup spread on top. Served on the side was a banana and Pumpkin Spice Coffee.

 We add about a half cup of milk to our coffee, to make it more creamy, and not so strong. And mixing Pumpkin Puree in really gives it a kick!

 Lunch was kinda like a bunch of snacks, but it was delicious.

We got sent some Goodonya bars to sample, so Court and I both split two different flavors, PB Chocolate, and PB honey

 

Verdict: These bars were pretty good, and they reminded me of a Bit o’ Honey candy.

Lunch was good, and the sun was a shinin’ outside.

Work was rough today, and lets just say there is one person who made it a living he**.

When we got home, Court and I each had a leftover Coconut Blueberry oat bar, then proceeded to do an insanity workout. That was just what we needed to get out all the stress from today.

Some other samples we tried today were some Doctor Crackers. Would you look at the great package they sent us, we are some lucky girls. More crackers please. lol

 Court and I took a recipe out of our Vegetarian Times magazine, to cook a dinner for the family tonight. We had a Vegetarian Lasagna using Cabbage instead of pasta, and no meat. Just basically Cabbage, Leeks, tomatoes, Garlic, ricotta, and Pine Nuts.

 While waiting for dinner to cook, we enjoyed some of these crackers with a little Artichoke Hummus.

 And so far I would have to say the fire roasted crisps are the best ones

Verdict: Crunchy and delicious with any dip, they make the perfect appetizer.

 The dinner plate included some “lasagna,” Veggies, Crackers, and Foccaccio Bread. 

 Dessert was a low cal dessert from the Chalene Extreme handbook.

  • 1 Chocolate sugar-free pudding (60 cals)
  • 1 sugar-free jello (10 cals)
  • Fresh strawberries
  • Lite Whipped topping

And we also added some crumbled Cinnamon Teddy graham too. It was so good, and a big dessert for fewer calories. Who doesn’t like More for less, I mean really?
