Yesterday’s Sunday has taken the record as one of the worst “Work Days” in the History at Einstien’s. We were short staffed, the customers were rude, everything was a mess, and we got our break way too late. =(.
Right smack in the middle of the day, our manager decides he is going to run home real quick(two hours later), then leaving all of us teenagers there to run the place with no big Boss Man around. Is this dude crazy? So anyways of course we had a huge rush, and then could not take our break until 1:30PM! That is a long time without food from 5AM. 8 1/2 hours, my god. My body was past hungry, I could feel my insides eating eachother. lol (Ok, a bit dramatic, but you can Imagine). Everyone at work was in a terrible mood, and I think our boss knew Court and I had the worst day of anybody, so he gave us FREE SMASHBURGER coupons for being such good sports. When we got home, we went with our dad to Sams Club to pick up some much needed staples such as OATS! OMG, I still can’t believe we made it through that 100+ Servong box. CRAZY~~
On to today, the Skies are grey, and breakfast was promptly prepared last night, then heated, and enjoed this morning. What was this wonderful creation you may ask? Well Lemon Chiffon Baked Oatmeal it was =)
In the mixture:
1 cup of old fashioned oats
1 cup of water
1 mushed banana
1/2 cinnamon graham cracker
3 lemon snaps
squirt of lemon juice
1/2 container of lemon yogurt
2 spoonfuls of coconut butter
Sprinkle of coconut
- Preheat the oven to 375, In a large mixing bowl, mix oats, water, mushed banana,cinnamon, lemon, and lemon zest
- Spray a small (8″ by 8″) pan with non-stick spray. Layer the bottom with Smashed cinnamon graham cracker and lemon snaps
- Pour a small layer of oat mixture over graham cracker/lemon snaps. Now add a thin layer of yogurt. Then, add the remaining oat mixture
- Heat up 2 spoonfuls of lemon yogurt, with 2 spoonfuls of coconut butter for 45 sec in the microwave, then mix well
- Top oats with a drizzle of lemon coconut butter icing, and sprinkle shredded coconut
- Cook in the oven at 375 degrees for 20-25 min
Served alongside a Lemon Ginger Green tea latte
While we got ready for school this morning, we listened to our book for American Lit, so we could get ahead for the week. We are reading Native Son, and neither one of us really like it that much. The weather today is rainy, and very gloomy. So to relax on our way to school, it was a dreary Joe kind of morning. We listened to Joe Purdy. His music is very soft and nice to listen to, perfect for today. It is a “B” day, so that means full on 4 classes (an hour and a half long each) Yikes!
Mid-Morning Snack: A dark chocolate almond Zone bar, wow this sucker tasted like a delicious candy bar. Very cool for getting it for FREE
After Scool Snack: A sandwich thin topped with homemade Raw Cashew Butter, half a banana, cinnamon, and honey
After this snack was enjoyed, Court and I layed in my bed watching Ellen, and shivered under the covers, cuz our house is-a-FREEZING! Then, we put away our laundry and did our INSANITY video. Today’s video was Pure Cardio and Cardio ABS. Monday workouts are always tuff.
Dinner was leftover enchiladas, a small amount of couscous, salad, and carrots w/ hummus. Random, but good. And the Secret Life was such a good episode tonight
Finally, to end the night an Einstien’s Cinnamon Walnut Strudel was Savored with every bite.
