Whit and I decided we were going to try to get to the gym early this morning, so we coffee and oats (baked oats to be exact) were a must. We made bake pumpkin oats to go along with our pumpkin spice coffee. This was definitley one of my favorite breakfasts of this year!
The make the pumkin baked oatmeal, we combined
1 cup of oats
1/2 cup of milk
1/2 cup of water
2 heaping spoonfuls of pumpkin puree
dash of pumpkin pie spice
handful of chopped walnuts and white chocolate chips
2 square of graham cracker crushed
drizzle of nutella and gingerbread butter
sprinkle of pumpkin granola
Serves 2 people.
Mmm… this was the most decadent breakfast.
At the gym Whit and I ran on the treadmill for 40 minutes. Our running intervals are as follows:
Repeat circuit 4 more times.
Then we did weight lifting and floor work for another 20 minutes. Everything felt much easier with the new running shoes we got for our birthday. For once my calves did not fill like huge bricks, and I did not get shin splints.
On the way back from the gym, we stopped at target to pick up some stuff for lunch. We ended up making a salad with a yogurt parfait and honey crisp apples. It felt really good to have after a good sweat session. It also felt like I was giving my body a break from all of the holiday eating.
This was literally the best flavor of yogurt I have ever tried!
We went shopping with Ashley and by the time we got back it was really late. So we decided to make something quick and easy. We enjoyed a warm bowl of Campbell’s tomatoes bisque soup with hummus and laughing cow tortilla wedges and sweet potatoe fries. There was also brie sprinkles over our soup.
