Today had just been mostly a relaxing day. I took a nap and watched Hannah montana. It was a blast haha. For lunch it was more leftovers: a “butt roll” with brie and ham, salad topped with bean dip and pico, and tuna helper.
We are not going grocery shopping anytime soon until we use up all of the holiday food and leftovers so Whit and I had to be creative we decided to have breakfast for dinner. Tonight it was Gingerbread Waffles. We loves our pancakes at IHOP so much that we decided to give this recipe we found a go.
Serves 7, makes 7 belgian waffles
- 3 cups all-purpose flour
- 1 cup plus 2 tbs. brown sugar
- 1 tbs. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. salt
- 1 1/2 tsp. ground cinnamon
- 1 1/2 tsp. ground ginger
- 1/4 tsp. ground nutmeg
- 1/8 tsp. ground cloves
- 1/2 cup of water
- 1/2 cup brewed coffee, cold or at room temperature
- 4 large eggs
- 1 stick (1/2 cup) unsalted butter, melted and cooled
- 1/4 cup fresh lemon juice
We chose to make ours into belgian waffles topped with a drizzle of agave, gingerbread butter, and pecans. You could also make these into pancakes easily by pouring 1/4 cup of the batter per pancake and adding the toppings of your choice. These were absolutley delicious! I will definitley be making these again even if it is not the holidays 🙂
For dessert we enjoyed a nice warm cup of peppermint hot cocoa and split a gingerbread and sugar cookie while we watched Keeping up with the Kardashians!
