The day after Christmas is always so boring. You have to face reality that the holidays are over and there is not much to look forward to and that you pretty much have to go full throttle with school until summer break. Oh well there is still one more week left of break, so I better make the most of it. I decided to make a new oat creation this morning I call this one Coffee Toffee Oats! This bowl consists of:
  • 1/3 cup of oats
  • 1/3 cup of milk
  • 1/3 cup of water
  • 1/4 cup of Starbucks Frappuchino Coffee flavored
  • 1 tbs. of toffee chips
  • 1 tsp. of nutella
  • handful of chopped almonds

So far today has been a very productive day. While Whit was at work, I got some homework done got the blog updated, and organized and made room for all of our x-mas presents. I have been sick with a cold so today I decided to cook up some tuscan double fiber progresso soup with asiago kashi crackers and a x-mas cookie. I love having soup when you are sick, it was just what I needed 🙂 I am still in my pj’s and I plan to do so all day!

We were supposed to go to the Zoo lights tonight, but since it snowed again and everyone is sick we decided to veto that idea. Instead when Whit got home we used up the rest of the gingerbread and sugar cookie dough we had in the fridge to make new years cookies. After hours of cutting our cookies and decorating then it was time to sit down and eat dinner. We had leftover “butt” rolls with brie and ham, deviled eggs, and made some parmesan tuna helper. It was very warm and satisfying on this chilly night!

We also made our cranberry, gingerale, lime drink again.

Dessert was a warm gingerbread cookie topped with peppermint ice cream.
