Thanksgiving EVE

Well today is officially Thanksgiving EVE! And in my family, today is a big day. We do about a third of our Thanksgiving cooking on this day. To get into the spirit Whit and I made ourselves pumpkin pie pancakes for breakfast.To go alongside our pancakes we made our special peppermint coffee, which by the way turned out especially frothy today because of one *key ingredient.*

Pancake Recipe(from Iowa Girl): makes about 3 good sized pancakes
  • 1/3 cup pancake mix
  • 1/4 cup canned pumpkin
  • 2 tsp brown sugar
  • 1 tsp butter/margarine
  • 1 egg white
  • dash of pumpkin pie spice
  • dash of cinnamon
  • splash of vanilla
  • water

Topped mine with banana and agave, mmm pumpkiney goodness! I am definitely in the spirit and ready for tommorow.

*Key ingredient-added 1/4 cup of almond milk with the boiling water!

Well it is time to get to work! Do you like my apron. I got it last Christmas. You can tell I have worn this a lot by the big stain. lol.

Wrapped some presents … and listening to some x-mas music!


Morning star chicken nuggets, turkey roll ups, kashi/special k crakers

After lunch it was time for another gym sesh….

Todays workout at the gym was:
– 30 min. elliptical
– 5 min. bike
-weights and strenth training

Finally it is time to relax while court gets ready for work. Seventeen and Self came! I made us both yogurt parfaits again for afternoon snack.

mountain high yogurt, pumpkin butter, pumpkin puree, pecans, granola, and a candy corn.

Tonight it is just me, court, mom, dad and we do not want to make anything for dinner because that means leftovers. We need room for all of that Thanksgiving food tommorow so us four went to Chipotle when Court got home from work. We split a chicken burrito bowl. Then we came home, turned on the fire and watched the biggest loser. Tonights episode was very inspiring, it makes me really want to set some goals and strive to achieve them 🙂

Then for dessert we both split a plate full of cinnamon apples.

I cannot wait for Thanksgiving tommorow, I better get to bed so that I can wake up and watch the Macey’s Parade!
