It was a super forggy yet cozy morning in Colorado today. Very chilly, so I decided to make a yummy “Pumpkin Yogurt Parfait.”
I used:
-a little plain Okio’s greek yogurt
– about 2 tablespoons of pumpkin puree
-dash of cinnamon
-dash of pumpkin pie spice
-a teaspoon of almond butter
-half of a cut apple
-a handful of Kashi go lean honey almond crunch
*It was divine and had the best aroma. mmm…

Break: Pumpkin Parfait and glass of skim milk
Lunch: Whole wheat PB Banana Honey Sandwich W/ a sugarfree carmel de leche pudding and a graham cracker mixed in.
Workout: After lunch I did some chores, then hopped on the elpitical for 45 min as well as did some pilates.

Afternoon Snack: Sargento reduced fat string cheese and a glass of light chocolate soy milk

For dinner tonight my mom is making her homemade pork noodle soup. It has noodles, pork, green onion, and eggs in it.
